Impact of domestic food programs on nutrient intake of low-income persons in the United States

Extract: An econometric model was developed explaining intakes of specific nutrients as functions of socio-demographic, economic, anthropomorphic, and policy variables. An integral aspect of the specification was the inclusion of domestic food programs as policy variables, and allowing these variables to interact with certain socio-demographic variables. Results indicate that domestic food programs generally have a positive impact on nutrient intakes of the recipient. However, the particular response was shown to be highly dependent on variables such as race, urbanization, income and education.
