Selling side dishes offers an easy way to boost average check size and add volume. Two different types of side dishes are identified: something that may be sold in addition to the main course, and side dishes that may be ordered as snacks or light meals themselves. Some cafeterias offer plain sandwiches with lots of "extras" for that sandwich. Coffee shop breakfast menus often include many side dishes to go with the basic meal. Vegetables such as mushrooms and French fried zucchini are very popular, and dessert, rice and pasta ideas are described. Photographs are included.
