Hidden nutrition cakes

A lesson plan was designed to demonstrate that the nutrient density of cake can be improved without negatively affecting taste. The 5 steps in the lesson show students in food and nutrition or child development classes that plain vanilla or chocolate cake can be made more nutritious, and satisfy their sweet-tooth, by the addition of ingredients like tomato juice, raisins, nuts, sweet potatoes and bran cereal. Food comparison charts are used to show the improved nutrient content of cakes made with the above-mentioned ingredients. Nutrition can be hidden in common foods people favor that normally contain more calories than nutrients in them. (kbc)
