Teaching visually impaired diabetics

A nutrition education program was developed for visually impaired diabetics to try to increase their knowledge of food exchanges and to increase the variety of foods in their diet. Seven 2-hour classes were offered at a diabetic discussion class; 12 diabetics and interested family members participated. The classes were based on single food exchanges and topics included: vegetables; fruit and milk; starches and fiber; protein and protein combinations; satisfying candy urges; and holiday eating. Based on discussion with the diabetics, it was found that they had an increased knowledge of food exchanges and were trying a greater variety of foods.(mp)
