An update on analytical techniques for N-nitrosamines

A brief account is provided of the current state of analytical methods development for the analysis of volatile and non-volatile N-nitrosamines in foods. A number of these methods can detect volatile nitrosamines to 1 ppb or less in various foods, but relatively little information has been obtained on the presence of non-volatile nitrosamines and other N-nitroso compounds infoods.
