Calcium is an essential nutrient required to build strong bones and teeth, and to allow for proper blood clotting, muscle contractions, and nervous system function. Growing children need 2 to 4 times as much calcium per kilogram of body weight as adults. Recommended Dietary Allowances for calcium are shown for persons of all ages. Dairy products are the primary and best-absorbed sources of dietary calcium. To increase calcium absorption from foods, persons should be sure to get enough vitamin D and avoid too much protein, fiber, and alcohol. Suggestions are given to help school food service personnel increase the calcium provided by school lunches.
