A review discusses the physical structure, chemical and nutritive composition, milling and utilization of wheat. Data are presented on the world and US production of major cereal grains, the per cent distribution of protein, vitamins, and minerals in the various parts of the wheat kernel, the trace mineral content of wheat and milled wheat fractions, the products of dry milling of wheat, the US consumption of wheat foods by men and women, and the per cent of daily intake of various nutrients contributed by wheat foods for men and women. Schematics detail the structure of a wheat kernel and illustrate how flour is milled commercially. Wheat is produced world-wide more than any other major grain, and is second in the US only to corn in major cereal grain production.(wz)
