Analysis of major nutrient compositions in kernel of 'Jizhaomian' walnut

This study was carried out to analyze the major nutrients composition of ‘Jizhaomian’ walnut from three different regions in Shandong. The results showed that the average content of protein, fat, and soluble sugar were 171.9, 628.7, and 48.1 mg/g, respectively; and the coefficients of variation (CV) of them were 8.8, 4.6, and 17.6%, respectively. Significant correlations were found in content of protein, fat, and soluble sugar among individual samples (P≤0.01). Seventeen amino acids including seven essential amino acids were determined in the walnut kernel. The average total content of essential acids was 54.9 mg/g which was 29.2% of the total amino acids (188.3 mg/g). The first two highest values were found in glutamate (37.2 mg/g) and arginine (30.3 mg/g). Five major saturated fatty acids including α-linoleic acid (69.5%), oleic acid (11.3%), α-linolenic acid (9.9%), palmitic acid (5.9%) and stearic acid (3.1%) were determined in the kernel oil of ‘Jizhaomian’ walnut. The relative content of unsaturated fatty acids was 90.6%, with a small CV (0.8%). During the seven main mineral elements, phosphorus (P) had the highest content (4.7 mg/g), the content of potassium (K) and magnesium (Mg) was 3.0 and 2.3 mg/g, respectively. The other four mineral elements were all no more than 1.0 mg/g.
