Citrus fruits are widely consumed in the world. From a nutritional point of view, like many fruits, they provide organic and inorganic compounds known to play important biological roles. Organic antioxidants are the subject of this review mainly centered on studies in humans. The aim is to show that the antioxidant property is clearly established by experimental data on the compounds of three citrus families of molecules, e.g., ascorbic acid (vitamin), cryptoxanthin (carotenoids) and flavanones (polyphenols). Each of these compounds, also possessing biological activities independent of their antioxidant property, raises the question of the impact of intake of citrus on the biological functions that requires knowledge on the contribution of each compound to understand and explain the role of dietary citrus. Experimental and epidemiological data suggest that the protective role of citrus may not be conferred to a single compound of citrus and it is proposed that additional action a minima should be envisaged to explain the biological and physiological effects of citrus.
