Seaweed consumption, although not yet widespread in France, seems to attract new consumers. Whether through Asian food or food supplements, it constitutes an additional source of iodine which is still insufficiently characterised. Under certain circumstances, a high consumption may exceed the upper limit of 600μg/day and induce thyroid dysfunction. The purpose of this article is to review the current knowledge and to provide advice to seaweed consumers.
