The new stakes faced by the ruminant livestock sector require that relationships are established between feeding practices and the monitoring of wastes to the environment, product quality and feed efficiency. As a result, the energy intake, so far defined according to aggregated units, has to be decomposed in nutrients. However, the absorbed nutrients are heavily metabolized by the splanchnic tissues, which have considerable energy expenditure, representing up to 50% of total energy expenditure of the animal. This article presents the progresses made to describe metabolisable energy in terms of nutrients and quantitatively predict the uptake or emission of nutrients by viscera, taking the liver as an example.
