A National School Lunch week (Oct. 12-18) celebration centered on a Mexican theme is discussed, with the menu to include: ground beef taco, lettuce and tomatoes, Spanish rice, Mexicali corn, pineapple wedges and milk; alternatives are listed. School food service directors and their staff should begin planning the NSLW week in early August, and a daily merchandising timetable is included. Preparations will vary for elementary and secondary students, but tacos can be filled and held in a slow oven. Classroom activities can include reviews of Mexican history and foods, such as corn, tomatoes and beans, and Youth Advisory Councils can be the chief vehicle for encouraging student support and participation. Everything from recipes to cost charts, and from pre-written radio announcements to collated nutrient analysis of both the taco menu and alternates is included.
