Survey reveals growth of entrepreneurial foodservice activity

A recent survey revealed that the annual food sales of franchised restaurants increased 11% from 1983 to 1984, and projected a 14% jump for 1985. The number of individual food service units in the franchise system continued to increase from 1982 to 1985. Company-owned stores had higher food sales than franchised units in both 1982 and 1985 (19 and 26% better, respectively). A total of 13 large firms (each having over 1000 food service units) accounted for 52% of all fanchised units and 58% of the food service sales ($22 billion for company-owned units; $16 billion for franchised units). Geographical growth patterns of food service units in the US also are discussed. (wz)
