Special sensory panels for screening, new synthetic sweeteners

Procedures used and results obtained from trained sensory panels' evaluations of the intensity and quality of potential new sweeteners are reported. Information is provided on panel formation and training, testing facilities and procedures, monitoring panel performance, determining reliability and validity, and motivating panelists. Sample score sheets and numerous statistical tables are included. The human sensory evaluations took place only after the new compounds passed mutagenicity and limited scale, single dose acute toxicity tests.
