A review article summarizes and discusses the characteristics of intestinal bacteria, their interactions with consumed foods, and the benefits and risks that they present. Specific attention is given to: the activity and survival of intestinal microflora; their metabolic modification of dietary components; studies with germ-free animals; the nutritional benefits of gut flora (e.g., polysaccharide degradation, vitamin synthesis); and the beneficial modification of intestinal bacterial via dietary supplements. The difficulties in studying the specific effects of gut microflora on the digestion and metabolism of dietary components due to the complex population of 400 different bacterial types also is discussed.(wz)
