The use of analytical methods employing stable- and radio-isotopes to assess the fate and content of mineral in food and nutritional studies is critically reviewed. Applications include: mineral uptake by plants; mineral distribution assessment in plants and plant subcellular fractions; characterization of the form and complexation of food minerals; mineral bioavailability studies in animals and humans; and the assessment of mineral bioavailability from individual commercial foods in human studies. Data and methodology guidelines are presented in 12 tables. A total of 114 references are cited. (WZ)
