In a long-term storage experiment, changes in moisture of unpeeled buckwheat in relation to humidity of the external environment and the effect of storage on grain composition, mycotoxin contamination and germination were monitored. Dry buckwheat (box I, harvest 2016, initial moisture 13.7%) and moist buckwheat directly from the combine harvester (box II, harvest 2017, initial moisture 24,1 %) were stored in 2 identical storage boxes with a unit capacity of approx. 1000 kg with the possibility of active aeration. Storage was started in 2017 and is still ongoing, the paper evaluates the period until the end of 2020. Buckwheat moisture in box I varied between 10.0 and 15.4% over 42 storage months, with annual maximums during January–February and minimums July–September. Moisture of buckwheat in box II decreased during continuous aeration from 24.1% to 14% in 26 weeks, during subsequent storage without active aeration, changes in buckwheat moisture (11.5–14.1%) had similar character depending on the humidity of the external environment as in box I. Stored buckwheat was not contaminated by mycotoxins and the grain composition did not change during storage in any of the 2 boxes. Germination decreased in buckwheat in box I from 96% to 78%, in box II from 99% to 90%.
