Prospects for the use of the yeast Lachancea thermotolerans from the ampelocenoses of Dagestan in the production of wines | Перспективы использования дрожжей Lachancea thermotolerans из ампелоценозов Дагестана в производстве вин

إنجليزي. The distribution of the Lachancea thermotolerans yeast in the ampelocenoses of Dagestan is studied. This yeast species association with various types of substrates (soil, berries, leaves) is shown, and the occurrence within 5 months a year is noted. The yeast is able to overwinter in the soil, which indicates involvement of the species in the natural yeast cycle. The isolated L. thermotolerans strains were genetically identified and placed in the yeast collections of the Department of Soil Biology of the Moscow State University (DSB MSU) and the All-Russian Collection of Microorganisms (ACM). As a result of screening, a sulfite-resistant strain 65-G, tolerant to sulfur dioxide up to 100 mg/dm3 is selected, which allows it to be used as a starter culture for the fermentation of wine pressing. A study of metabolism of 65-G strain in comparison with 13 Saccharomyces cerevisiae strains isolated from Dagestan ampelocenoses has revealed that the amount of synthesized sulfur dioxide and the change in the antioxidant contents are in the range noted during Saccharomycetes cultivation; the amount of titratable acids is higher, and that of volatile acids is lower. The 65-G strain was deposited in ACM under registration number ACM Y-3573 D. The culture stood the lyophilization procedure well and did not lose key morphological and physiological properties, which before and after lyophilization corresponded to the diagnosis of the L. thermotolerans species. The dynamics of fermentation of grape must sugars on L. thermotolerans 65-G and 320 S. cerevisiae strains in monoculture and on their mixture revealed significant fermentation activity of 65-G strain. Under micro-winemaking, samples of dry wines were obtained from the Rkatsiteli variety with sequential inoculation of S. cerevisiae 65-G and 253 strains and dessert wines from the locally bred Fioletta variety using cultures 65-G, 253 and 320 in monoculture. Based on the results of tasting experimental wines, the samples obtained using 65-G strain, both in composition with S. cerevisiae yeast and in monoculture, were recognized as the best in terms of wine organoleptic characteristics.

الروسية. Исследовано распространение дрожжей Lachancea thermotolerans в ампелоценозах Дагестана. Показана их приуроченность к различным типам субстратов (почва, ягоды, листья), отмечена встречаемость в течение 5 мес в году. Эти дрожжи способны перезимовывать в почве, что свидетельствует об их участии в естественном круговороте дрожжей. Выделенные штаммы L. thermotolerans генетически идентифицированы и размещены в дрожжевых коллекциях кафедры биологии почв МГУ (КБП МГУ) и Всероссийской коллекции микроорганизмов (ВКМ). В результате скрининга отобран сульфитоустойчивый штамм 65-G, толерантный к диоксиду серы до 100 мг/дм3, что позволяет использовать его как стартовую культуру при ферментации виноградного муста. Исследование метаболизма штамма 65-G в сравнении с 13 штаммами Saccharomyces cerevisiae, выделенными из ампелоценозов Дагестана, выявило, что количество синтезируемого диоксида серы и изменение суммы антиоксидантов находится в интервале, отмеченном при культивировании сахаромицетов, количество титруемых кислот выше, а летучих – меньше. Штамм 65-G депонирован в ВКМ под регистрационным номером ВКМ Y-3573 D. Культура хорошо выдержала процедуру лиофилизации и не потеряла ключевые морфологические и физиологические свойства, которые до и после лиофилизации соответствовали диагнозу вида L. thermotolerans. Динамика сбраживания сахаров виноградного сусла на штаммах 65-G L. thermotolerans и 320 S. cerevisiae в монокультуре и на их смеси выявила значительную бродильную активность штамма 65-G. В условиях микровиноделия получены образцы сухих вин из сорта Ркацители с последовательной инокуляцией штаммов 65-G и 253 S. cerevisiae и десертных из сорта местной селекции Фиолетта с использованием культур 65-G, 253 и 320 в монокультуре. По результатам дегустации экспериментальных вин лучшими по органолептическим характеристикам признаны опытные образцы, полученные с применением штамма 65-G как в композиции с дрожжами S. cerevisiae, так и в монокультуре.
