Contemporary market of food products is regulated by numerous and diverse standards that refer to the all aspects of food production, processing, packaging, storage and distribution. However, despite standardization and developed control system, certain failures can occur in the food supply chain that threaten the interests, trust and health safety of consumers. The subject is focused on intentional omissions and fraudulences of the consumers aiming to gain (additional) profit to the fraud perpetrators. Phenomenon of food frauds is analyzed based on available scientific researches and legal regulations. The aim is to indicate the characteristics of the food frauds, their types, but also elements of the vulnerability of food products of frauds.
