Desarrollo de un alimento instantáneo a base de nopal y Amaranto

En el presente proyecto se desarrolló un cereal para desayuno a base de nopal y amaranto considerando las características nutrimentales de ambos productos, la fibra del nopal y las proteínas del amaranto. De acuerdo al estudio de mercado, el trabajo se centró en desarrollar un producto alto en fibra, con el contenido básico de proteína, bajo en azúcar y sodio. Se realizaron diferentes formulaciones, a estas se les hicieron análisis microbiológicos para garantizar la inocuidad del producto. Al producto desarrollado se le realizaron análisis sensoriales para elegir la formulación de mayor preferencia y de la formulación elegida se realizó la estandarización y optimización del proceso. También se evaluó la textura, para determinar la crujencia obtenida del prototipo desarrollado, así como de la muestra control que se utilizó, donde se determinó que ambos son crocantes. Además, el contenido de humedad (5.8%) y la Aw (0.36) determinados indican que el producto puede tener la vida de anaquel esperada, aproximadamente de un año. Adicionalmente se diseñó la etiqueta e imagen del producto avalado con el 100% UAQ, así como la selección de un empaque de cartón con tapa de PS. Se realizó otro análisis sensorial de aceptación comparado con un producto del mercado con características similares en donde el prototipo de alimento desarrollado obtuvo una mayor aceptación. Los análisis bromatológicos indicaron que el producto tiene un contenido básico de proteína, es alto en fibra, puede ser declarado bajo en grasa, sin azúcares y sin sodio. Finalmente, el análisis financiero indica que existe una buena rentabilidad para la producción del cereal.

In the present project, a breakfast cereal based on nopal and amaranth was developed considering the nutritional characteristics of both products, the nopal fiber and the amaranth proteins. According to the market study, the work focused on developing a product high in fiber, with the basic content of protein, low in sugar and sodium. Different formulations were made, these were made microbiological analysis to ensure the safety of the product. The sensory analysis was carried out on the developed product to choose the most preferred formulation, and the chosen formulation was used to standardize and optimize the process. The texture was also evaluated, to determine the crunchness obtained from the developed prototype, as well as from the control sample that was used, where it was determined that both are ceocant. In addition, the moisture content (5.8%) and the Aw (0.36) determined indicate that the product can have the expected shelf life, approximately one year. Additionally, the label and image of the product endorsed with 100% UAQ was designed, as well as the selection of a cardboard package with PS cover. Another acceptance sensory analysis was carried out compared to a product on the market with similar characteristics, where the developed food prototype obtained greater acceptance. The bromatological analyzes indicated that the product has a basic content of protein, is high in fiber, can be declared low in fat, without sugars and without sodium. Finally, the financial analysis indicates that there is a good profitability for cereal production
