Mezclas de maíz normal con maíz ceroso y su efecto en la calidad de la tortilla | Blends of waxy with normal maize and their effect on tortilla quality

La tortilla de maíz se endurece durante su almacenamiento, debido a la retrogradación del almidón. Una práctica para retardar este fenómeno es adicionar gomas a la harina o bien aprovechar la retrogradación lenta de la amilopectina. Se estudió el efecto de mezclas de maíz normal (H-40) y maíz ceroso (MC), sobre las características de la masa y la calidad de la tortilla. Se determinaron las propiedades de formación de pasta de la masa, y en la tortilla fría se evaluaron: humedad, color, rolabilidad, extensibilidad, y fuerza a la tensión. Las variables en tortilla se midieron durante tres días de almacenamiento a temperatura ambiente (21 ºC). Como testigos se utilizaron tortillas elaboradas con 100% maíz ceroso y 100% maíz normal (H-40). Una proporción mayor 30% de MC en la mezcla condujo a tener masas con muy malas características de manejo (excesivamente adhesivas), y con viscosidades inferiores al testigo normal y el tratamiento con 30% de MC. El contenido de humedad de las tortillas no se afectó por la incorporación de MC en la mezcla, pero sí el color, ya que la luminosidad decreció y el aspecto de las tortillas fue más cristalino en la medida que se incrementó la proporción de MC. Dicho incremento se asoció con una menor fuerza de ruptura a tensión y mayor extensibilidad en las tortillas recién elaboradas (2 h). Pero después de 24 h de almacenamiento, las tortillas más duras y menos extensibles fueron las que contenían mayor proporción de MC (60, 85 y 100%). La rolabilidad presentó un patrón similar al de la textura. Sin embargo, en la tortilla recalentada las mejores características de suavidad y extensibilidad se observaron en las tortillas preparadas con 30% de MC en la mezcla.

Maize tortillas are hardened during storage due to starch retrogradation. A practice to retard this phenomenon is to add gums to the flour or seize the amylopectin's slow retrogradation. The effect of mixtures of regular maize (H-40) and waxy maize was studied on dough characteristics and on tortilla quality. The dough's paste-forming properties were determined and tortillas were evaluated for moisture, color, rollability, extensibility and tensile strength. The variables were measured for three days of storage at room temperature (21 ºC). The tortillas made with 100% waxy corn and 100% corn (H-40), were used as control. A higher proportion of 30% of waxy maize in the mix, led to dough with very bad handling characteristics (too sticky) and viscosities below the normal control and the treatment with 30% of waxy maize. The moisture content of tortillas was not affected by the inclusion of waxy maize in the mix, but the color did, its brightness decreased and the tortillas appearance was more crystalline as it increased the proportion of waxy maize. This increase was associated with lower tensile breaking strength and greater extensibility in freshly prepared tortillas (2 h). But after 24 h of storage, those tortillas which were harder and less extensible were those containing higher proportion of waxy maize (60, 85 and 100%). Rollability presented a pattern similar to the texture. However, in reheated tortillas, the best features of softness and extensibility were observed in tortillas prepared with 30% of waxy maize in the mix.
