Cultivar y comer tomates en la Valencia del siglo XVIII

[ES] Frente a la idea más común de que el tomate pese a llegar a Europa en el siglo XVI no formó parte de la dieta habitual hasta el siglo XIX, en este trabajo se demuestra, como en la Valencia del siglo XVIII era usual cultivar y comer tomates. Para ello se recurre a tres tipos de fuentes: libros de agronomía, libros de viajeros ilustrados interesados en la historia natural y, por último, algunos datos procedentes de archivos valencianos. A partir de estas fuentes se puede concluir cómo, durante el siglo XVIII el tomate pasó de ser un cultivo marginal y destinado al autoconsumo, a ser un producto hortícola ampliamente cultivado, comercializado y convertirse en un ingrediente básico de la cultura alimentaria de los valencianos.

[EN] Contrarily to the common conception that tomato despite arriving to Europe in the XVI century did not enter into the common diet until the XIX century, in this work we demonstrate that in the XVIII century it was common to grow and eat tomatoes. To do this we have used three types of sources: agronomy books, books of illustrated travellers interested in natural history and, finally, data from Valencian files. Fron these sources we can conclude that during the XVIII century tomato went from being a neglected crop destined to self-consumption to a horticultural product widely cultivated, marketed and that became a basic ingredient of the Valencian food culture.
