The effect of algae as food on the gonad weight and taste of the red sea urchin Pseudocentrotus depressus

This study was aimed to assess the growth and taste of gonads of the red sea urchin fed with different algae to be able to culture. An approximately five-month feeding experiment in tanks was carried out in April-September 2016 with satiation feeding of three types of algae, Arame (Eiseniabicyclis) and fresh or dried Makonbu (Laminaria japonica) . The significant increase of gonad index was found in the sea urchin fed with Arame. The sensory test showed the higher score in red sea urchin gonads fed with Arame and fresh Makonbu than dried Makonbu. The components of gonads fed with Arame and fresh Makonbu were less free valine, isoleucine and leucine having bitter taste, and were more free glycine and alanine, glutamic acid having sweet and umami tastes, respectively, than with dried Makonbu. The results suggest that feeding of Arame was effective for culturing red sea urchin to make better the gonad index and taste.
