Qualidade físico-quimica de grãos de milho armazenados com diferentes umidades em ambientes hermético e não hermético | Physicochemical quality of maize grain stored with different moisture contents in airtight and non-airtight environments

Uma fração significativa da safra produzida no Brasil é perdida durante o armazenamento. O objetivo do estudo foi avaliar a qualidade de grãos de milho armazenados com diferentes umidades iniciais em ambientes hermético e não hermético. Os grãos foram armazenados em tonéis metálicos de 200 litros, sendo que, no ambiente hermético, o tonel foi fechado com tampa e, no ambiente não hermético, não foi utilizada a tampa, a partir de três umidades (13,0, 17,0 e 29,0%). No início do armazenamento e a cada dois meses, até o oitavo mês de armazenamento, foram realizadas as seguintes análises: umidade; proteína bruta; gordura; cinzas; carboidratos; e acidez da gordura. Os resultados nos permitiram concluir que: 1. o armazenamento hermético manteve a umidade dos grãos de milho constante durante os oito meses de estocagem; 2. grãos de milho armazenados não hermeticamente tendem a entrar em equilíbrio higroscópico, conforme as variações de temperatura e umidade relativa do ar; 3. os resultados da qualidade nutricional se mantiveram no produto armazenado com 13% na forma hermética; 4. a acidez dos grãos de milho, armazenados de forma hermética, independente da umidade inicial, se manteve em relação aos grãos armazenados a granel em tonéis não herméticos.

A significant fraction of the crop produced in Brazil is lost during storage. The aim of the study was to evaluate the quality of stored corn with different initial moisture in airtight and not airtight environments. The grains were stored in metal barrels of 200 liters. In the airtight environment, the barrel was closed with a lid and in the nonairtight barrel, no cover was used. Three different moistures were measured (13.0, 17.0 and 29.0%). At the beginning of storage and every two months until the eighth month of storage the following analyzes were performed: moisture, crude protein, ether extract, ash, carbohydrates and acidity of the ether extract. The results allowed us to conclude that: 1. The airtight storage retained moisture of the corn grain constant during the eight months of storage. 2. Corn not hermetically stored tends to get in hygroscopic equilibrium according to variations in temperature and relative humidity. 3. The results of the nutritional quality were maintained in the stored product with 13% airtight. 4. The acidity of corn stored airtight, independent of the initial moisture content, was maintained compared to grain stored in bulk in barrels not airtight.
