ألمانية. Animal housing as influence on pork quality has been discussed very widely, but studies comparing genetically identical groups in different systems are rare. Looking through literature various experiments are based by different regimes of feeding because non-intensive pork production is also influenced by a lower level of protein, crude fibre or fat content in the diet etc.. Protein accretion is therefore reduced but also deposition of subcutaneous fat whereas intramuscular fat may be increased which is due to the higher age at slaughter of the non-intensively reared pigs. This might enhance palatability of pork although there is no clear evidence from objective studies. In experiments, comparison meat quality criteria in hybrid pigs reared on straw bedding and slatted floors but transported and slaughtered under equal conditions did likewise not show any differences.
