Although banana stem is an agricultural by-product, it is an abundant and potential source of raw materials for obtaining cellulose that can be applied to the food industry. Therefore, the present study was aimed at selecting a suitable technical parameters for extracting cellulose from banana stems. This study proposes a method to calculate the extraction rate of alpha-cellulose, and this index is used to evaluate and select appropriate parameters. This is a novel point compared with the calculation of extraction efficiency in other studies in the same field of cellulose extraction. The advantage of this formula is that both the yield and purity of the obtained cellulose can be evaluated. The results showed that the parameters of solvent concentration, extraction temperature, extraction time, material size, and material/solvent ratio all had a significant effect on the extraction process of cellulose, and appropriate parameters are: 1.0 M, 80 deg C, 60 min, 1.5 mm, and 1/10 (g/ml) ratio, respectively. This condition resulted in the extraction rate of alpha-cellulose from banana stems reaching 33.9+-0.9%. Thus, this study contributes to taking advantage of the huge waste products from banana stems to create cellulose with high application value, and it is also useful in limiting waste and protecting the environment.
