El presente estudio estuvo orientado a documentar y contextualizar lo concerniente al mercado minorista de la carne de cerdo, en una fase preliminar se buscó investigar las tendencias de consumo y comercio de carne porcina a nivel internacional, de manera que luego fuera posible y objetiva la investigación de los componentes del mercado nacional. Con base en la documentación recopilada y teniendo en cuenta la metodología descriptiva seleccionada, se indagan los parámetros comerciales en el Departamento de Cundinamarca como sesgo de análisis de las encuestas aplicadas que permitieron el análisis del comercio minorista de carne de cerdo en el municipio de Zipaquirá
