Control of abrasive grinding of amaranth grain to obtain two fractions with industrial potential | Seguimiento de la molienda abrasiva del grano de amaranto para la obtención de dos fracciones con potencial industrial

إنجليزي. Interest in the grain amaranth has increased in recent years due to its great potential as a functional food. The investigation showed the effect of milling abrasive conditions on protein/fat contain apparent area index and color parameters of the starchy fraction (FA) of the amaranth grain. It used a experimental design Box-Benhken, involving three factors: humidity (8-12%b.s.), mill feed (100-200 g) and process time (30-90 min). Image analysis was used to determine apparent area index, while chroma meter was used to determine color changes. Protein/fat contains, the CIELAB coordinates and apparent area index were affected by three factors, being little significant effect of the humidity. Results showed the formation of a starchy fraction and other lipoprotein fraction (FLP). The starchy fraction can be used directly in wet milling to obtain native starch, while lipoprotein fraction has great potential in the extraction of polypeptides to nutraceutical area.

الأسبانية؛ قشتالية. El interés por el grano de amaranto se ha incrementado en los últimos años gracias a su gran potencial como alimento funcional. Se investigó el efecto de las condiciones de molienda abrasiva sobre el contenido de proteína, el índice de área aparente y los parámetros de color de la fracción almidonosa (FA). Se utilizó un diseño experimental Box-Benhken, involucrando 3 factores: humedad (8-12%b.s.), Carga del molino (100-200 g) y tiempo de procesamiento (30-90 min). Se usó el análisis de imagen para determinar el área aparente y el fotocolorímetro para determinar los cambios de color del grano procesado. El contenido de proteína/grasa, coordenadas CIELAB y área aparente fueron afectados por los tres factores, siendo poco significativo el efecto de la húmedad. Los resultados mostraron la formación de fracciones almidonosa y lipoproteica (FLP), la fracción FA puede ser utilizada directamente en la molienda humeda para la extracción de almidón, mientras que, la fracción FLP tiene gran potencial para la extracción de polipeptidos en el área nutraceutica.
