Organic farming (OF) is now one of the leading quality labels for animal-sourced foods. Its specifications state that it improves animal welfare, preserves biodiversity and limits inputs. Various farming practices are implemented by farmers in terms of characteristics of animals and livestock management (genotype, feeding, housing conditions…), to meet these requirements. Farming practices depend on farm structure, geographical and economical contexts, and farmer's choices. The effects of farming practices on pork quality are essential to characterize when considering the full animal-farmer-processor-consumer value chain in a holistic approach of pork quality. Pork quality is considered as an integrative combination of seven attributes: commercial, technological, nutritional, organoleptic, health, use, and societal image. This article details the protocol for a systematic review of literature of the effects of various farming practices in OF on the seven quality attributes of pork. After a presentation of the OF specifications for pig farming and definition of the framework considered to study pork quality, we specify our research question. Then we detail our query for literature databases consultation and the selection process of articles based on eligibility criteria. We further present the analyses approach we will used.
