Efecto de diferentes combinaciones de carne, agua y carragenato en un rollo de cerdo reestructurado: Effect of different combinations of meat, water and carragenate in the making of a pork restructured roll

الأسبانية؛ قشتالية. El objetivo fue determinar la proporción de carne/agua/carragenato para obtener un producto reestructurado de merma cero con una buena calidad y económico. Se aplicó un diseño de mezclas D-Óptimo (DX-6) con 18 puntos experimentales. Se realizaron evaluaciones sensoriales, de textura, microbiológicas y físico-químicas, así como determinaciones de las pérdidas por grillado y en horno microondas. El efecto de las variables carne de cerdo de segunda, agua y carragenato mostró que, con los 18 tratamientos, se lograron productos de calidad sensorial, físico-química, microbiológica y textura semejantes y de muy buena aceptación. Con valores máximos de adición de 30 % de carne de segunda y 20 % de agua añadida, y mínimo de 0,3 % de carragenato de sodio se obtuvieron rollos de carne de cerdo reestructurado de muy buena calidad y económicos. Todas las variantes cumplieron con los requisitos establecidos en el proceso de cocción para los productos merma cero. Los porcentajes de mermas en el grillado fueron inferiores a los del calentamiento por microondas para los productos lasqueados. ABSTRACT Effect of different combinations of meat, water and carragenate in the making of a pork restructured roll The objective of the present work was to determine the proportion of meat / water / carragenate to obtain an economic and zero-loss restructured product with good quality. A D-Optimum (DX-6) design of mixtures was applied obtaining 18 experimental points. Sensory, texture, microbiological and physico-chemical evaluations were carried out, as well determinations of losses by grill and microwave oven. The effect of the variables second category pork meat, water and carragenate showed that, with the 18 treatments, products of similar sensorial, physico-chemical, microbiological quality, texture properties and a very good acceptance were obtained. The restructured rolls of pork meat with a very good quality and economic were obtained using maximum levels of pork meat and water at 30% and 20%, respectively, and minimum level of sodium carragenate at 0.3%. All the designed variants presented the limits requirements in the cooking process for the products without cooking losses. The percentages of cooking losses of grill were lower than the microwaves oven in portioned products. Keywords: restructured products, cooking loss, texture, ingredients, preservatives.
