Cheese is one of the most popular and best food products. There are more than 60 types of locally produced cheese in Georgia. Depending on the location, many traditional methods of cheese making and storage have been developed and new technologies for processing or storing raw materials are still relevant today, although the general technological foundations of cheese production are mostly identical. Several types of cheese with new organoleptic characteristics have been developed at the Scientific-Research Institute of the Food Industry, which are characterized by antioxidant action: the technological processes of cheese production are individual.
