The Fisheries is considered an important source of national income. Fish product is one of important component in the agricultural production. the problem of this study determined in increasing fish food gap with about 319 thousand tons in 2012. The study aimed to description and analysis of fish production in Egypt in terms of domestic production, imports, exports, consumption, the food gap, the proportion of self-sufficiency, the average per capita available amounts for consumption, In addition, studying the factors that effect on the production and consumption of fish in Egypt.   The study should be verification the following results   The fish production in Egypt is growing annually by about 55.9 thousand tons during the period average (1995-2012), which represents about 6.4% of the annual average, Imports of fish increase during the study period by about 4.5 tons by about 33.6 million pounds per year, and fish exports are increasing annually by about 0.68 tons by about 5.3 million pounds annually while the production of fish according to different sources show that fish farming ranked first by about 55.3% of the average amount of production, and the total northern lakes ranks second at about 14.7%, while the production of the Sea (White, Red ) ranked third by about 14.1%, and the River Nile is ranked fourth by about 10.2 and inland lakes and coastal ranked fifth and sixth by about 5.2%, 0.5% respectively during the study period . Nevertheless, the results show that there are statistically significant differences between the indicators during the period average (2008-2012). In addition, the results show that tilapia ranked first with an average production of about 646.4 thousand tons representing about 52.1%, While the average production of mullet, carp, catfish, reaches about 181.9, 142.1, 43.1 thousand tons respectively, representing about 14.7%, 11.5%, 3.5% respectively of the average total fish production during the period (2008-2012). The study also indicate that the most important economic factors that affecting on the fish production in Egypt is the amount of fish imports, the quantity of available fish, the partial elasticity of them are about -0.294 and 1.2, which indicates that an increase in the quantity of imports by about 1% leads to the decline of fish production by about 0.3%, increase the amount of fish consumption by about 1% lead to increase the amount of production by about 1.2%. However, the results show that the most important factors affecting on the amount of fish consumed in Egypt is the population and the average price of a kilogram of fish. Therefore, the study recommended the development of fisheries sector and set up of collection centers for the production of fish near fish farms, Moreover, the necessity of expansion in aquaculture to fill the fish food gap.

The study showed that the population, imports of red meat, and retail prices of red meat are the most important factors affecting the amount of red meat consumed during the study period. But the production of white meat, the population and the retail price of white meat are the most important factors affecting the amount of white meat consumed. As for the most important factors affecting the amount of fish consumed, they were represented in fish imports, national income, retail prices of fish and retail prices of white meat. The study also found that the meat group ranks first among the food groups, with a spending rate of about 27.4% and 28.19% of the total spending on food and drink in both rural and urban areas, respectively. While fish ranked sixth with a spending rate of about 6.37% and 6.88% in both rural and urban areas, respectively for the year 2017/2018. It also showed that the annual per capita spending on both meat and fish varies according to the spending categories of the family, and the annual per capita spending on meat in urban areas has increased by 13.65%, 39.64% from its counterpart in rural in each of the second spending category (50 thousand - less than 100 thousand pounds) and the third category (100 thousand pounds or more), respectively, and an increase in the annual per capita spending on fish in urban areas by 6.1%, 23.29% and 84.17% over its counter-part in the rural in the three spending categories, respectively. The spending flexibility in urban areas compared to the countryside on the two groups of meat and fish also increased, as the spending elasticity of the meat group reached about 0.492 and 0.677 in both rural and urban areas, respectively, while the spending elasticity for fish reached about 0.369 and 0.645 in both rural and urban areas, respectively.

Fresh Bolti fish (Tilpia nilotica) collected randomly from 9 different markets in Ismailia Governorate for evaluation the effect of grilled fish by the method used in grillrooms and houses on the concentration of pesticide residues found and the nutritive value.  Results revealed that decrease in the estimated parameters i.e. moisture, crude protein, fat and ash by grilling, this decrease were 6.07, 2.63, 4.07 and 1.56%, respectively. On the contrary, carbohydrates behaved another behavior that there was an obvious increase ranged from 1.98% to 2.92%. Fresh and grilled fish were analyzed to detect 12 organochlorine (OC) and 7 synthetic pyrethroid (SP) pesticides with a mean level on a lipid basis. Gas Liquid Chromatography equipped with Electron Capture Detector GC-ECD was used to detect the contamination in the samples. The results showed that p,p'-DDE  isomer was dominated over the other isomers in all analyzed fish samples, followed by a-isomer of hexachlorocyclohexane. The concentrations of OC residues were higher than SP pesticides in all fish muscles. Also, the fresh fish muscle recorded higher concentrations of the evaluated pesticides than the grilled one.
