Locally, venison is considered as a premium and exotic meat, as it is not commonly found in fresh food markets and grocery stores. Despite its limited availability, demand is always high in its niche market, especially during festive seasons which highly escalate the price. However, as an expensive delicacy, deer meat is highly susceptible to fraudulent substitution and adulteration. Authentic deer meat are currently only recognized by consumers based on their own experience, meat texture, and taste which can be quite subjective. To assist in authenticating local deer meat in the market and protect consumers from fraudsters, Polymerase Chain Reaction (PCR) analysis can be carried out to distinguish between venison and other animal meat and products. Farmed venison in Malaysia are mostly from the species Rusa timorensis while Rusa unicolor is bred in the wild. Here, we detailed a newly developed conventional PCR method that is able to detect R. timorensis and R. unicolor based on partial mitochondrial cytochrome c oxidase subunit I (COI) in a single run, thus providing a simple and more accurate alternative in venison authentication.

The severe acute respiratory syndrome coronavirus-2 (SARS-CoV-2) is the causative agent for the coronavirus disease 2019 (COVID-19) pandemic. COVID-19 is contagious and fatal to humans. In the context of the COVID-19 pandemic, significant concerns on food safety and security are rising due to potential interspecies transmission. As such, surveillance of SARS-CoV-2 on imported meat and animal parts is carried out and reported in this study to safeguard food safety and security. Overall, none of the 225 samples from various livestock (buffaloes, cattle, goat and pig) imported from seven countries were tested positive for SARS-CoV-2 with quantitative reverse transcription polymerase chain reaction (RT-qPCR) from July 2020 to November 2021. This study finding serves as a baseline data for SARS-CoV-2 in imported meat and animal parts. Notably, this study accentuated the importance of active surveillance to prevent zoonosis and to safeguard food safety and security.

In the conditions of the Republic of Belarus there were presented the results of a veterinary and sanitary assessment and bacteriological investigation of sheep slaughter products, which showed meat serviceability for consumption after application of Triclafen suspension. Application Triclafen suspension did not render negative influence on an organism of animals. It was proved by organoleptic and laboratory research of meat of slaughter animals of experimental and control groups. The meat obtained from healthy sheep which were administrated the suspension in accordance with microbiological indicators proved to be of good quality and corresponded to the established norms (Sanitary regulations and standards 11 - 63 Republic of Belarus 98): it had the general bacterial content within admissible limits and did not contain agents of anthropozoonosts, alimentary toxicosis and toxinfections and it can be sold without any restrictions.

Evaluation of amino-acid, mineral, and vitamin content, as well as indexes of meat safety obtained from young stock of cattle of different genotypes in accordance with possibility of its application as raw material for baby food production was realized in the conditions of the Republic of Belarus. In course of study there were used bull calves of white-and-black breed, Limousin breed and their crossbreeds. Research results showed that young stock of Limousin breed, Limousin x white-and-black crossbreds, and white-and-black breed (control group) gave high quality meat. In meat of animals of experimental groups there was stated high quality of almost all nonessential amino acids and nonreplaceable amino acids, in meat of crossbreeds there was noted considerable increasing of polyunsaturated fatty acids. In it there was 12,31% of linoleic acid against 4,75 in Limousin breed and 2,77% in white-and-black breed; and eicosatetraenoic acid – 2,4% against 1,24% and 0,7%, respectively. Also in meat of experimental bull calves there was stated higher content of vitamins, calcium and phosphorus, while the content of cuprum and zinc decreased

It is determined on the basis of conducted researches on perfection of energy-protein nutrition norm of young cattle of 6-12 months of age that 11,5 MJ of exchange energy at 6-7 months of age and decease to 10 MJ for 12 month of age is needed in 1 kg of dry matter to get 1000 g of average daily weight gain. 8-9 g of digestible, 5 g of non-digestible protein should come for 1 MJ of exchange energy of a diet. 1 kg of DM (Dry Matter) should contain 133-150 g of crude and 46-54 g of non-digestible protein
