Public health risk of trace metals in fresh chicken meat products on the food markets of a major production region in southern China

Because most chickens are reared in intensive farms, where a range of feed additives are used routinely, concerns have been raised on the potential public health risk of chicken product consumption. This study was conducted to characterize the contents of trace metals in fresh chicken tissues (354 samples) on the food markets in Guangdong province of southern China, a major region of chicken production with heavy per capita chicken consumption, and to assess the public health risk from chronic dietary exposure to the trace metals through chicken consumption. With the exception of Cr, Ni, and Pb, the contents of trace metals were generally higher in the chicken giblets (livers, gizzards, hearts, and kidneys) compared to muscles (breasts and drumsticks). Chicken tissues from the urban markets generally contained higher levels of As, Cu, Mn, and Zn than those from the rural markets, while the contents of Pb were typically higher in the chicken muscles from the rural markets. Results of statistical analyses indicate that Cu, Zn, and As in the chicken tissues derived mainly from the feeds, which is consistent with the widespread use of Cu, Zn, and phenylarsenic compounds as feed supplements/additives in intensive poultry farming. No non-carcinogenic risk is found with the consumption of fresh chicken meat products on the food markets, while approximately 70% of the adult population in Guangzhou and 30% of those in Lianzhou have bladder and lung cancer risk above the serious or priority level (10⁻⁴), which arises from the inorganic arsenic contained in the chicken tissues. These findings indicate that the occurrence of inorganic arsenic at elevated levels in chicken tissues on the food markets in Guangdong province poses a significant public health risk, thus the use of phenylarsenic feed additives in China's poultry farming should be significantly reduced and eventually phased out.

In many countries, the adverse impact of agriculture on water sources has been discussed with more attention recently by the water footprint estimation. Brazil is the second largest animal protein’ exporter, and this demand has a tendency to increase significantly until 2050, and in this context the water management will be crucial. Thus, the present study aimed to evaluate the water footprint and productivity in the broiler and swine slaughtered in Brazil from 2008 to 2018. The results showed that the herds of broiler and swine were concentrated in three main regions: Midwest, Southeast and South, representing 97.1% of the broilers and 99.7% of the swine slaughtered in Brazil. During the studied decade, the slaughter of broiler and swine increased 9.1 and 25.8%, respectively. The broiler and swine water footprint decreased by 15.4 and 3.5%, respectively. The average volume of water needed for the production of broiler and swine meat was 2533 L kg⁻¹ and 3754 L kg⁻¹, respectively. The average water productivity per kg of broiler meat was 0.397 kg m⁻³, while for swine it was 0.269 kg m⁻³. The average water productivity for soybean was 0.497 kg m⁻³, and for corn it was 1.18 kg m⁻³. The decrease in the water footprint is a result of the improvement of management practices, highlighting that it is necessary to improve the knowledge about the use of the water footprint methodology as a tool for water management to help public policies.

Chicken meat and hen egg are very popular foodstuffs around the world and highly consumed as curry, fast food, processed food, etc. assuming a promising source of protein. In the present study, the concentrations of Pb, Cd, Cr, As, Hg, Mn, Fe, and Zn in nationally representative samples of chicken meat and hen egg were determined and found in the range of 0.03–2.73, 0.01–0.015, 0.025–0.67, 0.04–0.06, 0.01–0.015, 0.15–0.63, 2.50–38.6, and 1.02–19.4 mg/kg-fw, respectively. The results demonstrated that only Pb exceeded the maximum allowable concentration (MAC) for dietary food. Multivariate statistical analyses depicted that anthropogenic activities were the major source of heavy metals in the investigated foodstuffs. Human health risks associated with the dietary intake of these metals through the consumption of chicken meat and hen egg were evaluated in terms of estimated daily intake (EDI), non-carcinogenic risk of individual heavy metal by target hazard quotient (THQ), total target hazard quotient (TTHQ) for combined metals, and carcinogenic risk (CR) for lifetime exposure. The calculated values of EDI, THQ, TTHQ, and CR were below their respective permissible benchmarks indicating the safe consumption of the investigated foodstuffs with respect to heavy metal contamination.

Campylobacter, Gram-negative bacteria, is the most common cause of acute bacterial enteritis in human beings, both in developing and developed countries. It is believed that poultry, in particular broiler chickens, is the main host of human infection with Campylobacter. Handling and consumption of contaminated chicken meat are the usual modes of transmission. Prevention and reduction of Campylobacter colonization in poultry farms will cut off the road of infection transmission to humans throughout the food chain. With the incidence of antibiotic resistance and with growing concern about superbugs, the search for natural and safe alternatives will considerably increase in the coming years. In this review, we will discuss the prevalence and risk factors of Campylobacter colonization in broiler chickens and sources of infection. This review also provides extensive and recent approaches to prevent and control Campylobacter colonization in broiler chickens, including biosecurity measures, natural feed/drinking water additives with antimicrobial properties, bacteriocins, bacteriophages, antimicrobial peptides, and vaccination strategies to prevent and control the incidence of human campylobacteriosis.

Deltamethrin (DM) is a synthetic pyrethroid insecticide commonly used in veterinary and agriculture. However, both animal and human exposure are associated with hepatorenal toxicity. Our experimental goal was to assess the protective effects of Spirulina platensis (SP) against DM-induced hepatorenal injury, growth performance, meat chemical composition, and its residues in meat, liver, and skin of broiler chickens. Sixty 1-day-old Cobb broiler chicks were assigned to 4 experimental groups; each was divided into 3 replicates with five chicks each; the 1st group received basal diet alone (control), 2nd group supplemented with SP 20 g/kg diet, 3rd group supplemented with DM 300 mg/kg diet, and 4th group supplemented with DM and SP diet. All groups have received the treatment for 35 days. DM, decreased body weight, weight gain, and increased feed conversion rate. DM showed a significant increase in ALT, AST, urea, creatinine, and MDA and a significant decrease in SOD, and GSH levels. Also, SP significantly reduced DM levels in meat, skin, and liver with a reduction 63.01, 63.00, and 62.90 %, respectively. The DM intoxicated group showed a significant decrease in protein and a marked increase in fat, cholesterol, and triglycerides when compared to the control group. Histopathological changes were also recorded. Dietary SP improved these parameters. Dietary inclusion of SP can be recommended due to the protective effects on DM-induced toxicity in broiler chickens.

This investigation was done for the assurance of potassium amassing in four assortments of maize (grains, shoot and root), soil, and water and in seven tissues of chickens (kidney, liver, heart, bone, gizzard, breast meat). The analysis of variance showed significant differences for potassium concentration in water in all sources of water; however, the season and variety significantly influenced the quantity of potassium in cereals. The corn varieties MMRI, Sadaf, and Pearl behaved differently when treated with water from various sources. Water taken from sewage had a higher concentration of potassium compared to canal and groundwater that is why the maize plants irrigated with this water had a higher grouping. Data regarding potassium concentration in different body parts of chicken showed that season and treatment have a significant effect on the potassium concentration in chicken organs. The variety was non-significant for the potassium concentration only in the bone. Season × Variety interaction was only significant in blood, meat heart, and gizzard. Season × Treatment and Variety × Treatment interactions were significant in the heart, kidney, and gizzard. The potassium contents were higher in the chicken body parts that were reared on grains irrigated with sewage water as compared to other groups. The potassium contents were higher in the chicken meat (96.23 ± 0.00) reared on grains of the Pearl variety raised with the sewage water. In a nutshell, the irrigation of grains with sewage water led to accumulation of nutrients greater than those irrigated with ground or canal water.

8∑PAHs in 2- and 4-month-old desi chicken organs collected from Faisalabad district, Punjab, Pakistan, were examined via high-performance liquid chromatography (HPLC). Exposure doses (AVDD) of PAHs with consequential lifetime excess cancer risks (LₜECR) were also estimated in people ingesting laboratory barbecued (Lb) and commercially barbecued (Cb) desi meat organs. The results exposed the presence of 8ΣPAH in 2- and 4-month-old Lb and Cb chicken organs: drumsticks (Dₛ), breast (BS), and wings (Wₛ) (0.45, 3.10, 0.97 ng g⁻¹; 2.52, 4.31, 1.22 ng g⁻¹; and 10.09, 15.04, and 9.06 ng g⁻¹ respectively). BαP was found only in Cb organs with the highest concentrations (5.08 ng g⁻¹) in Bₛ. It was above the EU’s tolerable limit, while it was not detected in all Lb organs. The lowest level of 8ΣPAH was found in 2-month-old desi Wₛ. A comparative percentage increase in 8ΣPAH levels between all Lb and Cb organs was found in the range of 1500–2416.67%. LₜECR for males and adults were ranging from 1.35 × E⁻¹³ to 4.49 × E⁻⁵ at different consumption rates with AVDD ranging from 1.08 E⁻⁶ to 6.01 E⁻⁵. In contrast to 2- and 4- month-old chicken meat, 2-month-old desi meat is better having less PAH load. Comparing different organs, Wₛ of former one displayed abridged PAH levels. In conclusion, Lb desi meat is less carcinogenic relative to Cb. More PAH levels are due to secondary smoke in Cb samples collected from the metropolitan. Ingestion of Lb 2-month-old desi chicken organs could be safe to dine as compared with 4-month-old desi and Cb organs. Graphical abstract

Cadmium (Cd) as a widespread toxic heavy metal accumulates in animal food including chicken meat through food chain enrichment and finally threatens human health. Selenium (Se) is an essential mineral and possesses antagonistic effects on Cd-induced multiple organs’ toxicity in chickens. The objective of the present study was to reveal the antagonistic mechanisms of Se to Cd from the aspects of oxidative stress, inflammation, and meat quality in chicken breast muscles. Firstly, the results showed that Cd significantly elevated the levels of malondialdehyde (MDA), hydrogen peroxide (H₂O₂), and protein carbonyl, and declined the levels of glutathione peroxidase (GSH-Px), superoxide dismutase (SOD), and catalase (CAT) to trigger oxidative stress in chicken breast muscles. However, Se treatment significantly alleviated Cd-induced oxidative stress by increasing the levels of GSH-Px, SOD, and CAT, and decreasing the levels of MDA, H₂O₂, and protein carbonyl. Secondly, Se obviously inhibited the expressions of Cd-activated inflammation-related genes including tumor necrosis factor (TNF-α), nuclear factor kappa-light-chain-enhancer of activated B cells (NF-κB), inducible nitric oxide synthase (iNOS), prostaglandin-endoperoxide synthase 2 (COX-2), and prostaglandin E synthase (PTGEs) in chicken breast muscles. Thirdly, meat quality-related parameters including pH₄₅ₘᵢₙ, ultimate pH (pHu), and drip loss were also detected, and the results showed that Se markedly recovered Cd-induced dropt of pH₄₅ₘᵢₙ and increase of drip loss in chicken breast muscles. In brief, these findings demonstrated that Se significantly alleviated Cd-induced oxidative stress and inflammation, and declined meat quality of chicken breast muscles.

Streams and surrounding terrestrial ecosystems are closely linked by numerous resource subsidies including anthropogenic subsidies which are increasingly entering streams due to intensive human activities. Also, streams are threatened by stressors such as glyphosate—the most widely used herbicide worldwide. However, the ecological consequences of anthropogenic subsidies and glyphosate on freshwaters are not fully understood. Here, we deployed leaf litter (Cinnamomum camphora) bags containing neither, either, or both treatments of anthropogenic carrion subsidy (chicken meat) and glyphosate (coated in agar) in four streams, which had different land use (i.e., forest, village, and suburban) in Huangshan, Anhui Province, China. We aimed to investigate the individual and combined effects of anthropogenic carrion subsidy and glyphosate on macroinvertebrates in streams and whether these effects differ with land use change. Macroinvertebrate communities significantly differed among streams: biodiversity index and total taxon richness were highest in village streams and lowest in suburban stream. Overall effects of carrion subsidy and glyphosate on macroinvertebrates were not significant. However, several taxa were affected in one or more streams by the individual or combined effects of carrion subsidy and glyphosate, indicating the importance of local community structure and physical habitats in driving the response of macroinvertebrates to carrion subsidy and glyphosate. Collectively, these results imply that the effects of carrion subsidy and glyphosate on macroinvertebrates are site-specific, and future studies should cover more streams and last longer time to better understand the ecological mechanisms driving such pattern.

Leather industry generates huge amount of chrome-containing leather solid waste which creates major environment problems to tanners worldwide. Chrome-tanned leather solid waste is primarily chromium complex of collagen protein. The presence of chromium limits its protein application in animal feed industry. The purified protein hydrolysate with zero chromium could be used in poultry feed. In this study, an attempt has been made to assess performance of poultry with purified protein hydrolysate as a feed derived from chrome-tanned leather waste as partial replacement of soyabean meal as a sole source of protein for growing broiler chickens. Growth study was conducted to evaluate the effect of feeding protein hydrolysate on performance and physiochemical characteristics of meat of broiler chickens. Two experimental diets containing various levels of protein hydrolysate (EI—20 % and EII—30 %) were evaluated. The comparative study was performed as control with soyabean meal. Daily feed intake, body weight gain and feed conversion ratio were measured from day 8 to day 35. At the end of the study, birds were randomly selected and slaughtered to evaluate for physiochemical characteristics of meat. Diet had significant effects on feed intake and body weight gain. Birds fed with 20 and 30 % protein hydrolysate consumed 9.5 and 17.5 % higher amount of feed and gained 6.5 and 16.6 % higher than soyabean meal-fed birds. The current study produced evidence that protein hydrolysate can replace up to 75 % of soyabean meal in broiler diets without affecting either growth performance or meat characteristics.
