Various industrial activities lead to environmental pollution by heavy metals. Toxic heavy metals enter the food chain of dairy cows through feed and water, then transferred into milk. This study investigated the correlations of heavy metal contents between individual cows’ milk, water, silage and soil. The relationships between heavy metal contents in individual cows’ milk with milk protein, fat, lactose, solid nonfat (SNF), and total solids (TS) were analysed. Concentrations of Pb, As, Cr, and Cd in milk, silage and water were measured by Inductively Coupled Plasma Mass Spectrometry (ICP-MS). Lead, Cr, and Cd in soil were measured by Atomic Absorption Spectrometry (AAS), and As was detected by Atomic Fluorescence Spectrometry (AFS). One-way non-parametric tests and Spearman correlation analyses were performed using SAS 9.4 software. Levels of Pb and Cd in milk from the unpolluted area were significantly lower (P < 0.01) than those from industrial area. Significantly higher (P < 0.01) As residue was recorded in milk from unpolluted area. Positive correlation of Pb was observed between milk and silage, and As in milk was positively correlated with As in water. Content of As in milk was slightly (r = 0.09) correlated with As in silage, even though strong positive correlation (r = 0.78) was observed between silage and water. Positive correlations were observed for Cr and Cd between milk and silage, as well as milk and soil. Positive correlations were observed in Pb-protein, Cr-protein, and Cd-lactose; other positive correlation coefficients were nearly equal to zero. The results suggest that industrial activities lead to possible Pb and Cd contamination in milk. Drinking water could be the main source of As contamination in cows. No clear relationship was found between milk composition and heavy metals contents in milk. Water and soil on the farm had a partial contribution to heavy metal contamination in milk.

The environmental performance of cow milk produced in a conventional semi-intensive system was assessed using a cradle-to-farm gate attributional life cycle assessment. The impacts of 1 kg FPCM—fat and protein corrected milk were obtained considering six midpoint impact categories from the ReCiPe 2016 method: climate change (CC), terrestrial acidification (TA), freshwater eutrophication (FE), land use (LU), water consumption (WC), and fossil resource scarcity (FRS). The modeling of the product system and calculating the environmental impacts considered the use of SimaPro™ software. Enteric methane and nitrogen emissions and inputs for feeding animals (fertilization for pasture production, use of seed in corn crops, and milk replacer in calves feed) were the main contributors to impacts in milk production in most categories. In addition, the indirect energy use and wastewater generation in milking and milk cooling also were relevant. Literature-based strategies are suggested to mitigate the identified environmental impacts to achieve the best environmental performance without decreasing technical and quality milk production. We emphasize the importance of improving productivity per milk cow, knowing the origin of the supply chain inputs, and using it efficiently to produce animal feeds as the main strategies to improve milk's environmental performance. Changes in allocation methods did not substantially differ in impact categories. Sensitivity analysis foregrounds the consistency of results and conclusions of the current study despite the uncertainties associated with methodological choices, simplifications, suppositions, and the use and adaptation of international databases.

Dairy cows are responsible for significant emissions of enteric methane (CH₄) and produce nitrous oxide (N₂O) and ammonia (NH₃) gas from manure. As an abatement strategy, we explored the effects of long-term condensed tannin (Quebracho and chestnut extracts) addition to dairy cow diets. Previous studies have demonstrated that tannins in cow diets reduce methane and ammonia efflux, but none have done so over a >1-month time period. A modified stanchion barn equipped with gas analysis instrumentation measured CH₄, N₂O, and NH₃ fluxes into and from the barn, at the onset of the experiment, and 45 and 90 days after feeding groups of lactating dairy cows a control diet or two levels of tannin extract at 0.45 and 1.8 % of dietary dry matter. Few statistical differences among treatments were observed, likely a consequence of high variability and low sample size necessary for conducting a study of this duration. However, on a per-cow basis, low and high tannin diets lowered CH₄ emissions by 56 g cow⁻¹ day⁻¹ and by 48 g cow day⁻¹, respectively. Diet tannin additions lowered CH₄ (33 %), NH₃ (23 %), and N₂O (70 %) per unit milk corrected emissions in the high tannin treatment compared to the control at the end of the experiment, without significant loss in milk production. These results suggest that relatively low concentrations of diet tannin additions can reduce ruminant CH₄ and gaseous N emissions from manure. The tannin effect observed after 90 days is a starting point for considering tannin additions as a potential long-term strategy for improving the environmental footprint of milk production.

Nickel (Ni) is an essential element in plants and animals, but elevated levels can exert toxicity in living beings, as recently highlighted by the European Food Safety Authority opinion. However, literature regarding the presence of nickel in the environment is scarce. In 2016, the EU Commission Recommendation n°1110 recommended monitoring the presence of Ni in feed in order to set maximum levels or to adopt other risk management measures to ensure a high level of animal health protection and consequently of human health. A total of 200 samples of feedingstuffs, drinking water, and milk were collected from dairy cow farms in Piedmont, and analyzed for Ni concentration by Z-ETA-AAS. Results showed the presence of nickel in feedingstuffs in a range from 0.20 to 16 mg/kg, while Ni concentrations in water and milk were close to or below the limit of quantitation. There was no carry-over from feed to milk in this food chain. Nickel concentrations were not of concern for animal health despite being in the upper range of those observed in vegetables from Europe.

Natural free estrogens found in animal manures are potent endocrine-disrupting compounds. Environmental detections can be caused by such processes as physical and chemical non-equilibrium and colloidal or conjugate facilitate transport. Antecedent or “legacy” concentrations of estrogens resident in soil may also contribute significantly to environmental detections. The objective of this study was to measure and understand the dominant causes contributing to estrogen detections in the environment from a grazed system. To achieve this objective, the effluent of undisturbed lysimeters constructed from soils of fields grazed by dairy cows (Bos taurus) was monitored for free and conjugated estrogens. Four lysimeters were dosed with urine (Urine) and four only received water (Control). Water transfer for all lysimeters was similar, and all lysimeters were near field capacity for the duration of the experiment. Rapid transport of a conservative bromide tracer suggested that preferential flow was an important physical non-equilibrium transport process. Free estrogens and conjugated estrogens (17β-estradiol (E2), estrone (E1), 17β-estradiol-17-sulfate (E2-17S), 17β-estradiol-3-glucuronide (E2-3G), estrone-sulfate (E1-S)) were detected in the source urine (E2 = 17,248 ng/L, E1 = 1006 ng/L, E2-3G = 967 ng/L, E2-17S = 886,456 ng/L, E1-S = 1730 ng/L). These same free and conjugated estrogens, in addition to estriol (E3), were all detected frequently in both Control and Urine lysimeters (detection concentration ranks: E3 > E2-17S = E2 > E2-3G = E1 = E1-3S). Total potential estrogenicity in the effluent of the Control and Urine was also similar, indicating the presence of antecedent estrogens was the dominant contribution to estrogenic detections. Additionally, the frequent detection of conjugates in the lysimeter effluent was important, because it indicated that conjugates were stable in soil but had greater potential mobility than free estrogens.

Maintaining and preserving the environment from pollutants are of utmost importance. Particulate matter (PM) is considered one of the main air pollutants. In addition to the harmful effects of PM in the environment, it has also a negative indoor impact on human and animal health. The specific forms of damage of particulate emission from livestock buildings depend on its physical properties. The physical properties of particulates from livestock facilities are largely unknown. Most studies assume the livestock particles to be spherical with a constant density which can result in biased estimations, leading to inaccurate results and errors in the calculation of particle mass concentration in livestock buildings. The physical properties of PM, including difference in density as a function of particle size and shape, can have a significant impact on the predictions of particles’ behaviour. The aim of this research was to characterize the physical properties of PM from different animal houses and consequently determine PM mass concentration. The mean densities of collected PM from laying hens, dairy cows and pig barns were 1450, 1520 and 2030 kg m⁻³, respectively, whilst the mass factors were 2.17 × 10⁻³, 2.18 × 10⁻³ and 5.36 × 10⁻³ μm, respectively. The highest mass concentration was observed in pig barns generally followed by laying hen barns, and the lowest concentration was in dairy cow buildings. Results are presented in such a way that they can be used in subsequent research for simulation purposes and to form the basis for a data set of PM physical properties.

Beef and dairy products may be important vectors of human exposure to perfluoroalkyl acids (PFAAs), but the understanding of how PFAAs are accumulated and transferred through agricultural food chains is very limited. Here, the bioaccumulation of PFAAs in dairy cows receiving naturally contaminated feed and drinking water was investigated by conducting a mass balance of PFAAs for a herd of dairy cows in a barn on a typical Swedish dairy farm. It was assumed that the cows were able to reach steady state with their dietary intake of PFAAs. Perfluorooctane sulfonic acid (PFOS) and perfluoroalkyl carboxylic acids (PFCAs) with 8 to 12 carbons were detected in cow tissue samples (liver, muscle, and blood) at concentrations up to 130 ng kg(-1). Mass balance calculations demonstrated an agreement between total intake and excretion within a factor of 1.5 and consumption of silage was identified as the dominant intake pathway for all PFAAs. Biomagnification factors (BMFs) were highly tissue and homologue specific. While BMFs of PFOS and PFCAs with 9 and 10 fluorinated carbons in liver ranged from 10 to 20, perfluorooctanoic acid (PFOA) was not biomagnified (BMF < 1) in any of the investigated tissues. Biotransfer factors (BTFs; defined as the concentration in tissue divided by the total daily intake) were calculated for muscle and milk. Log BTFs ranged from -1.95 to -1.15 day kg(-1) with the highest BTF observed for PFOS in muscle. Overall, the results of this study suggest that long-chain PFAAs have a relatively high potential for transfer to milk and beef from the diet of dairy cows. However, a low input of PFAAs to terrestrial systems via atmospheric deposition and low bioavailability of PFAAs in soil limits the amount of PFAAs that enter terrestrial agricultural food chains in background contaminated environments and makes this pathway less important than aquatic exposure pathways. The BTFs estimated here provide a useful tool for predicting human exposure to PFAAs via milk and beef under different contamination scenarios.

The study was conducted on a model of dairy cows of the Holstein breed. At the first stage of research, the elemental composition of cow hair was studied (n = 198). Based on this study, the percentile intervals of chemical elements concentrations in hair were established; values of 25 and 75 percentiles were determined, and they were considered as “physiological standard.” At the second stage, the elemental composition of hair from the upper part of withers of highly productive Holstein cows during the period of increasing milk yield was analyzed (n = 47). The elemental composition of biological substrates was studied according to 25 indicators, using the methods of atomic emission and mass spectrometry (AES-ICP and MS-ICP). An assessment of productivity parameters of cows depending on the level of toxic elements in hair revealed a negative statistically significant relationship with the level of lead. Lead content in hair was negatively correlated with the yield of fat (r = − 0.50), protein (r = − 0.37), and dry matter (r = − 0.48) in milk. Based on these data, cows were divided into three groups: group I, with Pb concentration in hair 0.0245–0.0449 mg/g, group II—between 0.0495 and 0.141 mg/kg, and in group III—between 0.145 and 0.247 mg/g. It was established that increasing Pb content decreases daily production of milk fat by 18.8 (P ≤ 0.05) and 25.3% (P ≤ 0.05), protein by 9.7 (P ≤ 0.05) and 10.7% (P ≤ 0.05), and dry matter by 8.0 and 13.0% (P ≤ 0.05) in cows. Average daily milk yield, adjusted for 1% of fat, decreased by 19.2 (P ≤ 0.05) and 25.3% (P ≤ 0.05), respectively. As the concentration of lead in hair increased, the content of toxic elements (Al, As, Cd, Hg, Pb, Sn, Sr) increased from 0.07 to 0.235 mmol/kg in group I, in group II from 0.082 to 0.266 mmol/kg, and in group III—from 0.126 to 0.337 mmol/kg. It was concluded that it is necessary to further study the use of physiological standard indicators of the content of toxic chemical elements in hair of dairy cows to increase productivity and maintain animal health and to create an effective system of individual health monitoring of highly productive cattle.

Protein quality plays a key role than quantity in growth, production, and reproduction of ruminants. Application of high concentration of dietary crude protein (CP) did not balance the proportion of these limiting amino acids (AA) at duodenal digesta of high producing dairy cow. Thus, dietary supplementation of rumen-protected AA is recommended to sustain the physiological, productive, and reproductive performance of ruminants. Poor metabolism of high CP diets in rumen excretes excessive nitrogen (N) through urine and feces in the environment. This excretion is usually in the form of nitrous oxide, nitric oxide, nitrate, and ammonia. In addition to producing gases like methane, hydrogen carbon dioxide pollutes and has a potentially negative impact on air, soil, and water quality. Data specify that supplementation of top-limiting AA methionine and lysine (Met + Lys) in ruminants’ ration is one of the best approaches to enhance the utilization of feed protein and alleviate negative biohazards of CP in ruminants’ ration. In conclusion, many in vivo and in vitro studies were reviewed and reported that low dietary CP with supplemental rumen-protected AA (Met + Lys) showed a good ability to reduce N losses or NH₃. Also, it helps in declining gases emission and decreasing soil or water contamination without negative impacts on animal performance. Finally, further studies are needed on genetic and molecular basis to explain the impact of Met + Lys supplementation on co-occurrence patterns of microbiome of rumen which shine new light on bacteria, methanogen, and protozoal interaction in ruminants.

Milk supplied to a dairy plant in Brescia City (Northern Italy) was found to be contaminated by dioxin like PCBs at levels above the European (EU) action limit (2 pg WHO-TEQ/g fat). As a consequence, 14 dairy farms were sampled individually, in order to identify and possibly eliminate the source of contamination. All the farms were located in Brescia or just nearby, an area that is characterized by a strong industrialization. Four out of the 14 farms showed contamination levels above the legal maximum limit set by European Commission at 5.5 pg WHO-TEQ/g fat for the sum of dioxins and DL-PCBs. Concentrations of 8.16, 6.83, 5.71 and 5.65 pg WHO-TEQ/g fat were detected. In the three most polluted farms, cow ration was substituted with feed coming from uncontaminated areas and the time needed to reduce milk pollution was evaluated. In all the three farms, contamination levels dropped below the EU legal limit after only 1 month from the removal of the pollution source. In each sampled farm, DL-PCBs were the major contributors to the total WHO-TEQ level, with percentages up to 87 % in the most contaminated one. PCB 126 WHO-TEQ value explained by itself large part of this contamination, and its decrease was fundamental for the reduction of milk contamination levels. This study provides an example of an on-field successful emergency intervention that succeeded in decontamination of dairy cows, allowing a fast restart of their production activity.
