2013
Brunava, L., Latvia Univ. of Agriculture, Jelgava (Latvia);State Stende Cereals Breeding Inst., „Dižzemes”, Dižstende, Lībagi parish, Talsi municipality (Latvia) | Alsina, I., Latvia Univ. of Agriculture, Jelgava (Latvia)
Oat breeders have improved yielding ability potential of oat (Avena sativa L.) cultivars, but set lower standards for biochemical composition of grain. Nowadays the quality of grain for consumers has become important especially in terms of lipids and β-glucan content. Experiments were carried out at State Stende Cereal Breading Institute in the year 2012 to evaluate the oats yield and grain quality. 15 different cultivars of Stende collection were compared by yield and parameters of productivity (test weight and 1000 kernel weight) as well as biochemical parameters (protein, starch, lipid, β-glucan, content). Biochemical parameters were tested by Infratec Analyser 1241. To obtain an equal research background all cultivars were grown in a plant breeding crop rotation field, with similar growing conditions (sowing-time, fertilizer, plant protection activities), which agree with generally accepted technology of oat cultivation in Latvia. Experiments were done in four replications. Plots were laid randomized. ANOVA procedures were used for data analysis. Yield of experimental cultivars varied between 4.28 ± 0.19 - 5.93 ± 0.22 t haE-1, test weight 46.85 ± 0.99 - 52.75 ± 0.44 kg hLE-1, 1000 kernel weight 33.70 ± 0.24 - 46.34 ± 0.80 g. Significant differences of tested yield parameters among oat cultivars were observed. The highest protein content was observed for local breed cultivars ‘Arta’ and ‘Mara’ 119.5 ± 02.6 and 110.5 ± 1.9 g kgE-1 accordingly. Low starch content, but high β-glucan content is characteristic for all Latvian cultivars.

2020
Mariseva, A., Latvia Univ. of Life Sciences and Technologies, Jelgava (Latvia) | Beitane, I., Latvia Univ. of Life Sciences and Technologies, Jelgava (Latvia)
Nowadays, veganism is becoming increasingly popular, because health concerns are usually the primary reason why people turn to vegan diet. The aim of the study was to identify the supply of vegan products on the Latvian market by analysing the ingredients used in the production of the products, nutritional and energy value of vegan products. 192 vegan products made in 20 different countries and available in online stores that offer their goods on the Latvian market were analysed. The research was carried out from January to March 2020. Information on the country of origin, ingredients, nutritional and energy value of the products was taken from product labels. The majority of the vegan products in Latvian online stores come from Germany. The most important ingredient in the production in product groups such as meat substitutes and dairy alternatives is soya (Glycine max.), which provides high protein content. The vegan products could not be characterized as low in fat, as the average fat content in the various product groups ranged from 7.9±1.7 to 19.7±3.3 g 100 gE−1 of product, except beverages. The average energy values for all product groups varied between 210.7 kJ 100 mLE−1 for beverages and 1226.0 kJ 100 gE−1 for snacks. There would be a need for everyday vegan products in the Latvian market, as most of the products are snacks at the moment, and legumes should be used as ingredient in the production of new vegan products with increased nutritional value.

2007
Duma, M., Latvia Univ. of Agriculture, Jelgava (Latvia) | Karklina, D., Latvia Univ. of Agriculture, Jelgava (Latvia)
The effect of selenium on the content of thiamine (vitamin B1), riboflavin (vitamin B2), as well as pantothenic acid (vitamin B5) in wheat (Triticum aestivum L), hull-less barley (Hordeum vulgare L.) and hull-less oats (Avena sativa L.) grains during germination were investigated. The winter wheat grain variety 'Zentos', hull-less barley and hull-less oats were used for study. Grains were soaked for 120 hours totally in solutions containing selenium from 10 to 200 mg lE-1 in the form of sodium selenate (Se+6). Grains with moisture content of 43%-44% were let to sprout at ambient temperature of 18+-2 deg C. The content of B1, B2 and B5 vitamins in germinated grains were determined using standard methods. Laboratory studies showed that changes in vitamin B1, B2 and B5 content depend on selenium concentration and kind of grains. Selenium additives promote biochemical activity of vitamin B1 and content of this vitamin decreases after 5 days' germination in all investigated grains at all applied selenium concentrations. Selenium concentrations of 10 and 25 mg lE-1 promote forming of vitamin B2 in wheat, barley and oat grains. The changes in vitamin B5 content depend on selenium concentration and kind of grains.

2007
Rubene, D., Latvia Univ. of Agriculture, Jelgava (Latvia) | Kuka, P., Latvia Univ. of Agriculture, Jelgava (Latvia)
The mean content of minerals in grains varies significantly among different parts of the world as it depends on the type of grain growing conditions and fertilizer application. In this study, the content of minerals in the wheat, oat and barley grains of the crop of the year 2006 from different regions of Latvia were investigated. The grain samples were analysed for K, Mg, Ca, Na, Cu, Mn, Fe, and Zn using Atomic Absorbtion Spectrometer, and for P using spectrophotometer. Phosphorus content in different types of grains varied from 3.10 to 5.65 g kgE-1, potassium - from 4.37 to 6.10 g kgE-1, calcium - from 0.40 to 1.40 g kgE-1, magnesium - from 1.20 to 1.68 g kgE-1, manganese – from 14.50 to 55.54 g kgE-1, copper - from 3.35 to 6.01 g kgE-1, zinc - from 18.72 to 31.84 g kgE-1, iron - from 42.39 to 120.40 g kgE-1, and sodium - from 32.34 to 55.52 g kgE-1. The greatest difference was found between the content of manganese and iron in barley, wheat and oat grains, but small difference was between the mean content of P, K, Zn, Cu, Mg, and Na.

2006
Gramatina, I. | Kreicbergs, V.
The major wheat flour constituent, which determines the dough quality, is gluten. Oatmeal has higher biological value due to amino acid composition and content if compared to other cereals, but the technological properties of proteins are not as good as the ones of wheat flour. Oat products can be used in bread making although the increased amount of additives shows negative influence on bread texture, elasticity, volume, taste, and flavour. The method is developed for hydrolysed oatmeal separation in soluble and insoluble fractions, thus extending the oatmeal application possibilities. The aim of the current research was the investigation of influence of hydrolysed oats insoluble fraction on wheat dough rheological properties. The obtained results proved that in case hydrolysed oats insoluble fraction additive was used, water adsorption was increased by 63.8%-66.4% and dough stability time was changed from 4.8 to 10.0 min. The negative influence on dough development time and dough softening degree was observed. The farinograpgh quality index was within acceptable limits (less than 120 FU), if the oat additive of 10% and 15% was used. It is possible to obtain dough with better rheological properties if the hydrolysed oats insoluble fraction additive is 15% from flour mass.

2015
Brunava, L., Latvia Univ. of Agriculture, Jelgava (Latvia) | Alsina, I., Latvia Univ. of Agriculture, Jelgava (Latvia)
Oat (Avena sativa L.) is one of the small grain crops produced in temperate climate zone. Common oat has been studied most often due to its multifunctional characteristics and nutritional profile. The main function of the oat husk is to protect grain from harmful conditions during harvesting and storage time. Oat grain size uniformity is an important parameter to the oat milling industry. The aim of this study was to compare the husk content of common oat cultivars grown in Latvia and to obtain its changes at different grain size fractions during three growing seasons. The field trial was carried out at the State Stende Cereal Breeding Institute from 2012 to 2014. Ten husked oat genotypes were studied. Oat samples were fractioned into size fractions and samples of each fraction dehulled by hand. Results showed that significant (p is less than 0.05) differences in the husk content were observed among genotypes, growing season and different grain size fractions. Significantly lower husk content was for genotype ‘Arta’ in all growing seasons. For majority of used genotypes increasing grain size the husk content decreased.

2001
Bisnieks, M. (Latvia Univ. of Agriculture, Jelgava (Latvia). Faculty of Agriculture. Dept. of Plant Biology and Protection)
The epidemiology of barley yellow dwarf disease is highly complex, involving numerous interactions between the abiotic environment and the crop, virus and vector - components of the disease. Barley yellow dwarf is the most economically damaging virus disease of grass and cereal crops worldwide. The disease identified as BYD has been reported in all countries in Europe causing losses on barley and oats, wheat and maize; losses on grasses are recognized but more difficult to quantify. There are five different strains of viruses causing BYD disease and all of them induce similar symptoms of chlorosis and stunting in graminaceous hosts. This report represents an overview of system components and their interactions in the epidemiology of barley yellow dwarf disease. As the main components considered here are aphids - (the only vectors of these viruses), host plants and viruses causing BYD disease. Some aspects of interactions between these components are also discussed.
