Methodology of dietary fibre determination in grain products

The dietary fibre is edible parts of plants' carbohydrates that are resistant to digestion in human small intestine. Diets naturally rich in dietary fibre support to prevent constipation, improve gastrointestinal health, glucose tolerance and the insulin response, and reduce the risk of colon cancer, hyperlipidemia, hypertension and other coronary heart disease risk factors. About 45% of the dietary fibre intake comes from grains and grain mixtures. In Latvia, there are neither data, nor investigations of the dietary fibre content in grain products during processing and in the end products in which manufacturers and consumers are interested. The aim of this paper was an approval of dietary fibre determination methodology by using analytical equipment the Full option science system (FOS) Analytical Fibertec E 1023. The dietary fibre determination experiments were carried out in the Research Laboratory of the Department of Food Technology at the Latvia University of Agriculture in 2009. The Total Dietary Fibre (TDF) content was analyzed in the samples of rye whole grain flour, rye whole grain bread, and wheat biscuit. Experiments showed that the fibre content in rye whole grain flour is 13.8 g 100 gE-1, in rye whole grain bread - 11.6 g 100 gE-1, and in the wheat biscuit - 1.9 g 100 gE-1. Reached data are comparable with results of other researchers' data.

Jerusalem artichoke powder (JAP) from Jerusalem artichoke (Helianthus tuberous L.) roots is a nutritive valuable product that can be used for a healthy product development. The influence of JAP on the quality and degree of liking of cakes was investigated. Sensory evaluation of cakes was realized in two stages: the first - to define the quality attributes of the cakes with JAP from the point of view of the experts, the second – to find out the consumers' views on the cakes, whose quality has been improved in accordance with the recommendations of the experts. As a control sample, the classic home cake was evaluated. Control sample was compared with the cakes, where the amount of wheat flour prescribed by recipe was partly substituted with JAP at different concentrations. Experts evaluated cakes and defined the highest acceptable concentrations of JAP in cakes. For the consumers it was offered to assess the cakes with JAP at concentration 30% and with different taste and aroma enhancers. Cakes with 30% of JAP additive were the most favoured by the sensory properties: aroma, texture, softness elasticity, porosity and softness, surface crust, appearance, colour, shape, and size. Results of analysis of variance showed that there no significant differences in the degree of liking between the cakes with JAP and the cakes with taste and aroma enhancer additives (p is greater than 0.05). There had been performed hardness analysis and colour measurement for cakes with JAP. The observed results declare high influence of aroma and taste enhancer on cakes structure and colour.

Assessing willingness to pay for constructing septic tanks in rural Vietnam

The coverage of improved sanitation in Vietnam is still low, especially in rural areas. As a result, water-borne diseases remain key threats to public health. While the government has committed itself to increasing the proportion of people with access to improved sanitation, it cannot afford to subsidise sanitation for the entire population. Thus, improving rural sanitation continues to rely heavily on financial contributions from household-level private users, which depend on their willingness to pay (WTP) for such services. Knowing people’s WTP is crucial when assessing the economic viability of projects, setting fees, evaluating policy alternatives, gauging financial sustainability, and designing socially equitable subsidies. However, such information on household-level demand is scarce to non-existent in Vietnam. We assessed the WTP for septic tanks among the rural population in Vietnam and identified the some factors that influence the level of WTP. The study was conducted in Hanam province, in northern Vietnam. Researchers randomly selected and surveyed 600 households, conducting personal interviews with the main breadwinners or decision-makers in each. Contingent valuation was used to obtain relevant economic data. This method consists in asking individuals how much they would be willing to pay for a change to the quantity or quality (or both) of a particular commodity. We found that 63% of the studied households were willing to pay for construction of a septic tank. The average WTP level was VND 16 million (US$ 800), which amounts to about 15% of the households’ annual disposable income. Economic hardship was found to be the major reason for not installing a sanitary latrine. Health, cleanliness, and prestige were found to be three major motivating factors for constructing septic tanks. Regression analysis showed that the odds for spending money on improved sanitation services were higher in households with better income, as well as in households whose head had better knowledge of sanitation.

To help achieve this, the new CGIAR research initiative “Sustainable Healthy Diets through Food Systems Transformation” (SHiFT) is working with the emerging multi-stakeholder platforms in the country in order to support the planning and implementation of specific activities. This article demonstrates success already achieved.

Mortality rates and co-morbidities are high in people with psychiatric disorders. These patients have unhealthy dietary habits, which include increased consumption of fast food, snacks, sweets, saturated fats, and reduced consumption of protein, fruits, vegetables, and legumes, which contributes to the risk of developing chronic diseases such as obesity, type 2 diabetes, and cardiovascular disease. Unhealthy and monotonous eating habits lead to a significant lack of nutrients such as protein, omega-3 fatty acids, B-group vitamins, and fibre. The aim of the literature review is to investigate the main diet problems of patients with psychiatric disorders and, based on the studies on the nutritional value of legumes, to evaluate their suitability for the development of new products for patients with psychiatric disorders. Studies show the beneficial effects of legumes on the regulation of rapid fluctuations in cholesterol, blood pressure, excess body weight, and glucose levels, which in general delay the formation of inflammation and reduce the risk of psychiatric disorders. The benefits of legumes are due to their high protein and fibre content, low fat content, and content of iron, copper, magnesium, zinc, and B-group vitamins. In addition, legumes contain bioactive compounds that contribute to the prevention of chronic diseases.

Individuals’ emotional well-being is determined by several factors, including the ability to cope with daily stress and the ability to cope with various daily challenges. Ability of the management to provide favourable psychoemotional and psychosocial conditions within their team is particularly important. However, managers do not always have the knowledge and skills to lead their teams. For the development of the methodology, a study of the scientific literature on topical issue like healthy workplace was performed. The empirical part of the study is based on the results of the survey conducted Lithuania, Latvia, Estonia and Sweden within the Nordplus project ‘Dealing with anxiety during a pandemic to enhance adult well-being’ on the impact of COVID-19, as well as the training that would be necessary for the managers of companies or organizations to promote emotional wellbeing in the workplace. The comparative study was conducted from the perspective of both employees and managers. The results show that the impact of the COVID-19 pandemic on workplace and the well-being of employees was not strong for the respondents, depending mainly on the job position, the size of the organization and country. Managers and employees consider various psychological trainings essential.

The purpose of this report is to provide information and analysis to government, civil society, and donors interested in improving the well-being of the rural population of Mon State. Specifically, the report analyzes the different sources of income for rural households, as well as their socioeconomic characteristics, with a view to identifying potential pathways to improving incomes, especially for poor households, and stimulating inclusive rural growth. The overall picture that emerges is one of an economy heavily dependent on services for local employment and on international migration for income. Like a two-legged stool, such an economy is potentially unstable in the face of external shocks. Diversification of the Mon State economy, including diversification and increased productivity within the agricultural sector, will lessen the relative dependence on external migration remittances and result in more resilient growth in the future

With rapid improvements in agricultural productivity and residents’ income, China has made remarkable advances in reducing hunger and malnutrition, as well as quality improvements in residents’ diets, witnessed by the progressively increasing consumption of fruits, eggs, aquatic products, and milk. However, new health and environmental challenges also arise alongside China’s dietary transition. Specifically, overweight and obesity have become increasingly prominent, and the incidence of diet-related chronic diseases has been on the rise. Among all these trends, the significant increase in meat consumption not only led to nutrition and health challenges, but also imposed intense pressure on resources and the environment. There are significant gaps between the current diet of Chinese residents and the recommended diets of the Chinese Dietary Guidelines and the EATLancet Commission. The current Chinese diet is mainly composed of grains, dominated by refined rice and noodles, insufficient coarse food grains, excessive meat, and insufficient consumption of whole grains, fruits, legumes, and milk. Incidence and mortality from diet-related chronic diseases in China would be significantly reduced if the “healthy diet” recommendations of the Chinese Dietary Guidelines, EAT-Lancet, Mediterranean and flexitarian (or low meat) diets were adopted. Deaths in China would be reduced by 1.15 million by 2030 if the population were following the Chinese Dietary Guidelines, or 1.8 million by shifting to the EAT-Lancet diet. At the same time, such a shift would significantly lower greenhouse gas emissions. Simulation results show that greenhouse gas emissions from agricultural activities would be reduced by 146-202 million metric tons if residents adopted one of the healthy diets, and by 60-116 million metric tons compared with food consumption at the 2020 level. In recent decades, agricultural support policies in many countries have played an active role in promoting food production and reducing hunger and poverty. Remarkable achievements have been made globally in agricultural production, with rapid growth in output of agricultural products outpacing population growth. Populations’ food consumption has increased and the number of undernourished people has decreased significantly. Particularly in China, agricultural reforms that were initiated in the late 1970s have increased farmers’ incomes and improved dietary quality. By 2020, China had achieved a moderately prosperous society in all aspects and had eliminated hunger and poverty. This chapter reviews domestic and international agricultural support policies and their impacts. China's experience of developing agricultural support policies has been summed up in order to, on the one hand, provide a reference for other developing countries. On the other hand, China is now implementing new national development goals of nutrition and health, green and high quality development, common prosperity, and institutional opening.
