Milk market of small scale artisan cheese factories in selected livestock watersheds of Honduras and Nicaragua

Surveys were made of rural artisan cheese factories located in the region of Olancho, Catacamas, and Juticalpa in Honduras (n=10) and in Esquipulas and Muy-Muy in Nicaragua (n=13). The objective was to analyze the milk market of small rural artisan cheese factories in livestock watersheds of Honduras and Nicaragua to determine if there is a market for higher milk production; how much additional milk can the market absorb in each season of the year; there is a market for milk of higher hygienic quality. The main buyer of the milk from small and medium scale farmers in Honduras and Nicaragua is the rural artisan cheese industry, which absorbs almost 80% of the milk produced in both countries. Total milk production during the rainy season is about twice that during the dry season, causing an over-supply and scarcity of milk, respectively. The shortage of fluid milk during the dry season leads to an unsatisfied market. The artisan cheese factories in Honduras and Nicaragua would be willing to buy 76% and 55% more milk during the dry season, but this supply is not available due low milk productivity. This fact suggests that an aggressive program for the promotion of shrub legumes with sugarcane to supplement the herd during the dry season would have more impact that the promotion of grasses or legumes for the rainy season when there is little market for additional milk produced. In addition, rural artisan cheese factories in Honduras and Nicaragua, that consider the milk they collect is of bad quality, would be willing to pay a higher price if the option to collect milk of better hygienic quality exists. In Honduras this price would be about 9 % higher during the dry season and 11% higher during the rainy season. In Nicaragua the cheese factories would be willing to pay a milk price which is 17% higher, but only during the rainy season. As a result, large incentives exist in both countries to increase milk production during the dry season and to improve the hygienic quality of milk in the studied areas.

Zemgale planning region divides into two intra-regions (Zemgale 1 and Zemgale 2) by natural, soil and other agricultural resources. Each intra-region has different size of farms. The aim of the research was to find the structure of rural economy in different size farms or rural enterprises of Zemgale 1 and Zemgale 2 intra-regions. The research showed that very small farms dominate grow-plant sectors production. Medium size farms and enterprises have solid high proportion of grow-plant sector production in total production value. This proportion is even higher in biggest agricultural enterprises and companies (100 is less than or equal 250 ESU). In general author has stated that in Zemgale 1, which is the biggest agricultural production territory in Latvia, grow-plant production sectors dominate.

The role of small and medium-sized enterprises (SME) in the development of economics becomes more important, as they can quickly re-orientate in the rapidly changing economic situation, and they are the main guarantee of wellbeing on the regional scale. Although these enterprises are different, still the SME in the European Union meet several similar difficulties. One of the main problems of the SME is lack of management competences that causes difficulties in ensuring efficient management of the enterprises. The aim of the research was to investigate the competences that are necessary for the employees to carry out their duties from the point of view of small and medium-sized forest enterprises (SMFE). The task of the research was to identify problems faced by the SMFE management in daily business. To get results, the qualitative interview method was used as well as, survey was carried out, and the obtained data from well-established methodology and criteria were evaluated. The research results show that the distribution at the SME is specific professional competence with 40%, social competence with 23%, methodical and individual competence with 19% and 18%. The results show that necessary management competences in SME and large enterprises are equal, but the kind of their application and topicality differ; therefore, it is essential to organize activities of professional development concerning the definite model and type of business. The professional teaching models for SMFEs should be according to enterprises management specifics, focusing on the fact that managers of SMFEs to combine the competences.

Europe is the number two producer of beer worldwide. However, the quantity of beer sold in Latvia in the last decade did not increase considerably, and the average quantity of beer consumed per capita rose very slowly. Even though beer consumption was stable in Latvia, the quantity of beer supplied to the market was approximately three times greater than the quantity of the other kinds of alcoholic beverages combined, totalling about 15 million dekalitres. Besides, in recent years in Latvia the segment of craft beers tended to increase, which became increasingly popular in Western Europe and the number of small breweries sharply increased there. In Latvia, the number of small breweries increased at a slower pace, therefore, the research aim was to examine the factors influencing the development of small breweries in Latvia. The research found that most of the breweries in Latvia qualified for the status of small brewery, the output of which did not exceed 50 000 dekalitres per year. Although small breweries produced craft beers, yet their performance and development were considerably influenced by the activity of the large breweries and the purchasing power of consumers. Small breweries positively influence the beer drinking traditions of Latvians, which can contribute to the stable development of the small breweries. Small breweries have their competitive advantages in the market, which is due to the quality and assortment of their products, as well as they perform extra economic activities that contribute to their recognition.
