Combined Effect of Milk Source and Acidification Method of Cheese Milk on Properties of Mozzarella Cheese

A 3×3 factorial arrangement of treatments in a completely randomized design was used to find out the combined effect of milk source {cow (CM), buffalo (BM) and mixed (CM:BM 1:1 ratio)} and the method of acidification {starter culture (SC): Streptococcus thermophilus, acetic acid (AA) and citric acid (CA)} of cheese milk on properties of Mozzarella cheese. Cheese made using BM and acidified with SC served as the control. Main effects of milk source and method of acidification of cheese milk showed a significant effect on yield of cheese whereas interaction effect was not observed. A significant interaction effect between milk source and method of acidification of cheese milk was observed for fat and protein percentages, meltability, b* value and sensory properties of resultant cheese. Fat and protein content was significantly higher in cheese made from BM acidified using AA and in control, respectively. Meltability was superior in Mozzarella cheese manufactured from CM acidified using CA compared to the control. Sensorily, Mozzarella cheese manufactured from mixed milk (CM: BM 1:1 ratio) acidified using CA obtained the highest mean score for all the sensory attributes and was significantly superior compared to the control. Therefore, the milk source and the method of acidification of cheese milk are closely linked to the yield and the quality characteristics of Mozzarella cheese and hence, careful selection of raw materials and manipulation of processing conditions are required to get an optimum quality end product.

‘Lafun” was enriched with soy protein supplements (curd or residue) during the mashing before drying at 10%. The amino acid result indicated that enrichment improved the amino acids contents as well as the protein quality of the products. While enrichment generally improved the mineral element composition, enrichment with the residue significantly improved the mineral composition when compared to enrichment curd. That the products were hygienically produced was confirmed by the non-detection of heavy metals which may suggest it safety for human consumption. Condensed tannins, phytate, oxalate, hydrogen cyanide and trypsin inhibitor were tested as possible anti-nutritional factors in the product and the values obtained were within safe level and correlated with those reported in previous or similar studies. It was concluded that enrichment with soy curd/residue is a safe and viable means to improve the nutritional benefits derivable from “Lafun” especially for those that ‘Lafun” is a major staple.

Using functional foods which are recently a rising value in the food science arouses curiosity in terms of health among people. Honey, as a natural functional food, might play an important role in the increase of this value with a large but conscious use of it in kitchens. Having a prebiotic property with its oligosaccharide components, honey has a characteristic of supporting the increase of probiotic Bifidobacterium and lactobacilli bacteria. In the current study, the culinary status of honey was investigated depending on the views of professional chef trainers. For honey that shows different compositions, chefs point out that, because of the changes of nectars in the flora collected by bees, the qualitative honey bought from local producers could be a more functional food by using it with sauces, milk products like yoghurt and cheese, with such spices as ginger, turmeric, black pepper, and cinnamon at room temperature without an application of heat treatment.

Frost events are of particular importance for plants. Its occurrence determines growing season. Early or late frost events may cause injuries and damage in plants which have not yet entered dormancy in fall/winter, and for plants in flowering period in winter/spring. Global average temperature increase has been accompanied by changes in extreme temperature events. Observations have shown that there has been a decreasing pattern in frequencies and intensities of frost events. In this sense, it is aimed in this study to analyse probabilities of frost occurrences within the latest 30-year climatic normal period, from the cold period of 1991-1992 to that of 2020-2021, at five locations (Aydın, Kuşadası, Nazilli, Söke ve Sultanhisar) in the province Aydın, western Türkiye. Six frost indices were selected, and three temperature thresholds to define frost were considered when daily minimum temperature (TMIN) being equal to or less than 0.0, -1.2 or -2.3°C.The selected frost indices are first fall frost (FFF), last spring frost (LSF), frost period (FP), number of frost days (NFD), dates of frost occurrences (DFO) and consecutive frost days (CFD). The results revealed that Nazilli and Sultanhisar are characterized by the highest probabilities of frost in terms of frequency, intensity and duration, along with the earliest occurrence of first fall frost and latest occurrences of last spring frost, and with longest duration of frost period. On the other hand, Kuşadası and Söke have opposite characteristics in comparison to Nazilli an Sultanhisar. Aydın lies in between them. The results are expected to provide information to schedule the agricultural activities, and to avoid detrimental impacts of frost events.

Broiler production supplements income of smallholder farm households. Profitability and productivity and analysis are important considerations in measuring efficiency or performance of a farm business; hence, improved output and income are not only a function of increase in the scale of production, but also how efficiently the resources are being utilized. This study therefore estimates the profitability and level of productivity among broiler farmers in Jos North, Plateau State, Nigeria. Multistage sampling technique was employed to select respondents for this study. Primary data collected were analysed using descriptive statistics, farm budgeting model and Total Factor Productivity (TFP) analysis. The study revealed that the net farm income of broiler production was ₦96,900/flock size; suggesting a relatively profitable venture with prospects for improved economic potentials. The estimated percentage profit margin was 45.6%; indicative of the percentage net margin accruable to the farmer from the estimated gross margin and benefit-cost ratio was 0.84. Furthermore, most (54.3%) of broiler farmers were sub-optimally productive as their TFP indices were below the optimal scale; attributable to sub-efficient input mix and cost of production inputs. In addition, constraints of broiler production in the study area included the following; high cost of feeds (92.9); high cost of chicks (85.7%); financial constraints (80%); high cost of poultry equipment (55.7%); high cost of medication (35.7); disease outbreak (28.6%) and inefficient market system (21.4%). Improving access to and subsidy of poultry feeds, chicks, production inputs and credit, extension, medical services and cooperative formation for market linkages are strongly recommended.

This study was carried out with the aim of assessing the effectiveness of four biochar materials; in reducing nitrate leaching from soils of three different textural classes in the Nigerian Savanna region. Soil samples (0-20 cm depth) were collected from three different soil types and three different locations each in the Nigerian Savanna using stratified random sampling. Two hundred and fifty (250) g of soil samples were amended with 0, 2.5, 5, 7.5 and 10 tonha-1 of Maize cob biochar (MCB), rice husk biochar (RHB), cow dung biochar (CDB) and poultry litter biochar (PLB) and were subjected to laboratory leaching experiment. Sixty (60) ml of nutrient solutions containing 300 mgl-1 nitrate using ammonium nitrate (NH4NO3) was applied to each of the laboratory biochar-incubated soil columns to study biochar effect on nutrients retention and transport. The experiment was laid in a Randomize Complete Block Design (RCBD) replicated three times. Leachates were collected and nitrate concentration was determined using a dual beam UV/VIS spectrophotometer. The data collected were analysed using the Generalized Linear Model (GLM) procedure and the means were separated using Tukey’s honest significant difference (SAS version 9.4). Results obtained revealed that there were no significant differences among the biochar treatments on nitrate leaching from Clay loam. However, highest nitrate leaching from Loamy soil of 30.53% was recorded by the application of 2.5 tonha-1 PLB and was significantly different from the application of 2.5 and 5-ton ha-1 RHB and 5-ton ha-1 MCB. Similarly, highest nitrate leaching from Sandy loam of 32.18 % was recorded by the application of 5-ton ha-1 MCB and was significantly higher than 5.94, 2.40 and 7.12 % recorded by the application of 2.5 and 5-ton ha-1 RHB and 7.5 tonha-1 CDB respectively. Therefore, application of 2.5, 5-ton ha-1 RHB and 7.5 tonha-1 CDB can effectively reduce nitrate leaching from Sandy loam. While 2.5, 5, 7.5 tonha-1 CDB and 2. 5 and 5 tonha-1 RHB reduced nitrate leaching from Loamy soils.

Assessing the suitability of soils for agricultural production is critical in promoting sustainable agriculture. Knowledge gained from soil suitability analysis provides the sound basis for making informed decisions about soil management and crop selection in a given area. In view of this, this study was carried out to assess the physical suitability of soils in the Libga Irrigation Scheme for the sustainable cultivation of jute mallow (Corchorus olitorius), tomato (Solanum lycoperscum L.) and cabbage (Brassica oleracea var capitata). Soil samples were collected at 0–30 cm and 30–60 cm depths from 50 geo-referenced points located at the nodes of a 100 m × 100 m regular grid. Particle size distribution, bulk density, total porosity, field capacity, permanent wilting point, available water capacity, saturated hydraulic conductivity, electrical conductivity and pH were determined following standard laboratory protocols at the AGSSIP Laboratory of the University for Development Studies, Nyankpala campus, Ghana. Weighting of soil properties was achieved through the analytic hierarchy process (AHP). Soil suitability maps for the selected crops were produced using weighted overlay analysis in ArcGIS (10.5). The results showed that generally about 44.3 ha (76.4 %), 44.7 ha (82.2 %) and 55.7 ha (96.0 %) of the irrigation field are moderately suitable for jute mallow, tomato and cabbage production respectively. The major limiting factors for the crops were high BD and acidity levels. The AHP proved to be a very useful tool for the incorporation of farmers’ views into decision making about the suitability of soils for crop production.

A myriad of health claims are being made in favor of the consumption of green tea due to its easy availability and greater popularity. On the contrary, certain health risks of excessive green tea consumption have begun to emerge. The aim of the present research was to observe the baleful effects of excessive green tea intake on hematological parameter and histoarchitecture of liver. A total of thirty (n=30) Swiss albino mice were taken and randomly divided into Control C, Treated T1, and Treated T2 groups. Each group consisted of ten (5 male+5 female) mice. The Control C group was fed with normal mice pellet and water (3ml/mice) orally but the treated T1 group was supplied mice pellet with 2ml/mice of green tea+1ml/mice of water orally as well as treated T2 group was given mice pellet and 3ml/mice of green tea orally two times in a day for 60 days. After the experimental tenure, mice of each group were sacrificed ethically and samples (Blood, liver and lungs) were collected for further hematological and histomorphological studies. Treated T2 group of mice were motionless (inactive and stagnant). Anatomopathologically, the liver surface became dark red in color with considerable hepatomegaly and mild hemorrhage also found on lung surface. Histologically, mild central vein congestion and severe venous congestion with dilation were found in the portal vein of the liver of the treated T2 group of mice. Hematologically, hemoglobin level significantly reduced in the treated T2 group of mice than the others. Within this experimental period, female mice of each group gave birth (15-18 pups) that were devoid of any abnormality. Therefore, it can be concluded that excessive green tea intake in a day might have baleful effects on hematological parameter (Hb concentration) and histoarchitechture of liver in Swiss albino mice.

The main source of seed filling results from the photosynthesis of the green tissue closest to the seed sinks in the capitula. To evaluate the role of different leaf strata and capitula in seed yield and its components of Safflower genotypes, a field study was performed as a factorial experiment based on RCBD in 3 replicates in East Azarbaijan Agricultural and Natural Resources Research and Education Center in 2008. The used factors in this experiment were: two Safflower genotypes including (Mahalli Esfahan and Goldasht) and defoliation in five levels: defoliation of plants in lower 1/3, middle 1/3, upper 1/3 of the stem, capitulum covered with aluminum paper and control (without defoliation). The results showed that defoliation did not affect plant height and number of pods. But, there was a highly significant difference between strata in terms of number of seeds per pod, number of seeds per plant, 1000 seeds weight, oil percentage and oil yield. The interaction of genotype×strata treatments in seeds yield and harvest index was significant. Among the defoliation treatment levels in both genotypes, the highest decrease in the seed yield compared to the control were observed in the upper 1/3 defoliation levels, whereas the lowest decrease was observed in the lower 1/3 defoliation level. The rate of seed yield reduction in Mahalli Esfahan was higher than Goldasht. The change in Goldasht seed yield was mostly due to changes in the number of seeds per plant and the number of seeds in the head. In addition, net photosynthesis, strata leaf area, and photosynthesis contribution of the upper strata compared to the lower ones were higher, and removal of the upper strata had the highest effect on seed yield through the reduction in the total photosynthesis of the whole plant. Also, covering the capitulum caused a significant decrease in the seed yield. So, head photosynthesis has a major contribution to Safflower seed yield.

Pomegranate (Punica granatum L.) is a tropical and subtropical climate plant with high economic value and nutritional content. Having valuable phytochemicals in terms of health caused an increase in demand for pomegranate consumption and this situation accelerated pomegranate production. However, global warming and climate changes are among the factors limiting the production of pomegranate. Especially abiotic stress factors caused by adverse ecological conditions cause significant economic losses in pomegranate production. Drought stress, which is one of these negativities, causes fruit cracking problem, which is one of the important problems in pomegranate production. Minimizing the fruit cracking problem, which causes economic losses, is possible by breeding varieties that are resistant to under non-irrigated conditions. Determining the resistance of the cultivars to be used in breeding programs against fruit cracking will allow the development of elite cultivars. For this purpose, it was aimed to determine the fruit cracking rates of 30 different pomegranate genotypes in the Pomegranate Genetic Collection of Çukurova University, Faculty of Agriculture, Department of Horticulture, under non-irrigated conditions. A correlation was made between the cracking rates of the genotypes and the amount of soluble solids content (SSC). According to the correlation analysis between the cultivars, there is no statistically significant difference between the SSC and the cracking rate. However, a weak negative correlation was determined between SSC-cracking rate (-0,1132). In the light of the pomological data obtained, it was determined that 8 pomegranate genotypes grown under non-irrigated conditions had a fruit cracking rate of 40 % - 85 %, cracking rates were below 10 % in 8 pomegranate genotypes and no fruit cracking was observed in 6 genotypes. As a result of the analysis, it was observed that drought stress was effective on the fruit cracking rate or the exacerbation of the fruit cracking rate, but the resistance level of some genotypes against the fruit cracking problem was high.
