Our Traditional Product Doner; Production Methods, Quality Characteristics and Development Studies

Doner is a kind of kebab which is produced after marinating meat and spitting the fat with marinated meat then cooked in the doner cooker. Doner is our traditional product that is consumed gladly and its production is growing day by day in our country and in different countries of the world. The increasing demand for this product, which is unique to our country, has led researchers to work on doner and to raise awareness of consumers. When the limited number of studies are examined, it is concluded that the chemical properties of the doners presented to consumption in Turkey are generally in conformity with the standards, but their microbiological characteristics vary and can have risks for health. In addition to the studies related to doners offered for sale, it has been observed that there are studies in the direction of identifying and developing the factors that affect the quality of doners, however, in recent years formulation development studies have intensified. In this study, studies on doner were compiled and doner production, quality characteristics of doners offered for sale, the effects of different factors on doner production and product properties development researches were investigated, in this way it was intended to provide a collective overview to our traditional product doner.

Crucial point of fishery management is to let the fish or other species reproduce at least once during their life. Therefore it is very important to determine the length at maturity (Lm) for given species before the first capture. Focus of this study is to determine the consistency between scientific results and minimum landing size (MLS) regulations in the marine fishery of Turkey. For this purpose, 4/1 communique on commercial fishery (2016/35) published by the Republic of Turkey Ministry of Agriculture and Forestry was investigated in order to expose the MLS of given species in Turkey. Literature survey on Lm was also conducted preferably on studies which were performed in Turkish waters or from the Mediterranean basin in order to avoid regional differences. While 86 marine species were reported to be landed in the official fishery statistics, only 49 of them were appointed with a MLS in the commercial fisheries regulation. It was determined that MLS of 27 species were below the Lm according to the selected literature, 7 of them require result on Lm, status of the 2 species couldn’t be decided due to different length types and 13 (27% of the decisions on MLS) of them were found to be in accordance with the scientific literature on Lm. This study shows that MLS regulation must be revised for most of the species in the surrounding waters of Turkey and comprehensive maturity studies are urgently needed in order to fulfill the scientific gap.

This study presents a new sex pheromone trap for European Grapevine Moth, Lobesia botrana, to monitor its field population without direct field observations in Turkey. The study was conducted in Hadim and Taşkent (Konya) districts in 2016. Viticulture has been carried out for many years in both districts where the maximum vineyards are located. Due to the distance to the center and the difficulty of transportation to these districts, there has not been conducted any detailed studies until today. Therefore, this study about L. botrana, which is harmful in these vineyards, was planned. In order to monitor the pest population, the cameras were placed onto the pheromone traps, and it was tried to get information about the population development of the pest via internet without going to the vineyards. For this purpose, four locations in Hadim and one location in Taşkent district were selected and one pheromone trap was established in each location before the bud burst in vineyards. The camera was placed on each pheromone trap and was linked with vMEyeIPC program via internet. The time of first adult flight and the population development of adult L. botrana were determined. The first adult flight began at the beginning (7/4/2016) and in the middle of April (15/4/2016) in Hadim and Taşkent, respectively. The number of offspring and the maximum number of pest individuals caught in traps were recorded in vineyards in both districts.

The aim of this study was to evaluate the dough proofing activity of Kluyveromyces lactis (ATCC 8585) in different dough formulations and to compare it with the commercial active dry bakery yeast Saccharomyces cerevisiae. Leaving ability of yeasts was tested in lean and rich dough. For both cultures, lean and rich dough mixtures containing 0.3 g of yeast biomass (on dry weight basis) and wheat flour in 15 ml of water was prepared. Rich dough contained also either 2.0 g of sucrose, 2.0 g of lactose or 2.5 g of whey powder. Dough mixtures were incubated at 29°C and volume increase was recorded every 15 min. We determined that Kluyveromyces lactis had higher volume and leavening rates compared to commercial bakery yeast strain in lactose-rich or whey-rich dough. These results demonstrated the potential of Kluyveromyces lactis yeast strain as a suitable culture for whey fortified bread making.

As a result of the studies conducted in Bartın in 2019, it was determined that Garella musculana (Erschoviella musculana Erschoff 1874) caused damage to young shoots of Juglans nigra in the world for the first time. According to Eppo data,it is known that Garella musculana damages only in Juglans regia (major), but in this study, it has been revealed as the first record in the world that Garella musculana also causes damage in Juglans nigra (Black walnut) (young shoots).

In this study, fish consumption preferences of the families living in the district of Almus in Tokat province and the factors that are effective in choosing them were investigated. In the scope of the study, the data obtained from face-to-face interviews with households were used. In the study, consumers prefer which of the alternatives of rainbow trout (Oncahorynchus myciss), carp fish (Cyprinus carpio) and spring fish (Silurus glanis) consumed most of the fish species found in Almus Dam Lake, and the importance level of consumer preference in this choice. the Analytic Hierarchy Process (AHP) method was determined by the AHS method. Criteria consist of price, nutritional value, taste, freshness, bone condition, sold place, habit, hunting, aquaculture. It has been determined that the most attention is paid to the freshness (0.175) in the direction of the findings and that the criteria of taste (0.136), sold place (0.133) and food value (0.122) follow. In the preference of fish consumption, Rainbow Trout criterion was given priority with 48% points. İt is aimed to determine the importance level of the criteria that are effective in consumers ‘preference of fish consumption in the direction of obtained findings and to be a guide for fish farmers and sellers.

North Sinai governorate is one of the largest desert areas in terms of intensity of agricultural extension work, In spite of efforts by state agencies to bring about agricultural development in the governorate, agriculture is still somewhat characterized by primitive traditional methods, making agricultural development rates almost indistinguishable, And with the scarcity of extension research carried out in North Sinai in the field of environmental SWOT analysis, It was necessary to conduct the study that is trying to analyze the current situation of agricultural extension in North Sinai governorate through identifying the strengths; weaknesses, opportunities, and threats (SWOT). A participatory SWOT analysis study using open-ended qualitative-type instrument was conducted; Research data were collected through personal interviewing questionnaire with 90 respondents representing 75% of the total extension workers in North Sinai Governorate, during the period from May till October 2018. The results showed that the most important strengths of these were that a large proportion of the extension workers are specialized in agricultural extension, more than half of the guides were from rural areas and the high job satisfaction degree among of the majority of the extension workers while the most important weaknesses were Weak budget and inadequate funding for extension work, Absence of job description for the extension workers, and Lack of financial and material resources. On the other hand the most important opportunities were Availability of research institutes in the governorate, NGO-Public Sector Collaboration. While the most important threats were Decreased investments targeting the agricultural sector in general and the extension system in particular, Poor Farmer Organization, Security instability in the governorate. Depending upon SWOT outputs, some relevant strategies were discussed to develop agricultural extension system in the governorate through some dimensions that uses strengths and opportunities to overcome weaknesses and to avoid threats or minimize their effects.

The aim of this study is to determine the effect of zinc (Zn), which is a common nutritional problem for both plant and human health, on corn and wheat plants. In the research carried out in greenhouse conditions, Zn (Zn0: 0 mg Zn kg-1, Zn5: 5 mg Zn kg-1) was applied to Çukurova and Niğde soils having a natural Zn deficiency and yield and mineral nutrient concentrations of wheat and corn plants were determined. Shoot dry matter yields of wheat and corn plants in both soils significant increased by Zn application. Zinc application caused to 20 and 76% shoot dry matter yield increase for wheat in Çukurova and Niğde soils. The increase in corn pants were greater which was 174% in Çukurova soil and 127% in Niğde soil. The Zn concentration was significantly increased with the increased shoot dry matter yield, while shoot Fe, Mn and Cu concentrations were decreased with Zn applications.

The aims of this study were to evaluate the traits of reproductive, milking and growth performance of Saanen and Saanen × Hair crossbreds (F1, B1 and B2) raised at the Bandırma Sheep Research Institute. The data were collected from 868 goats for reproductive performance and milk yield and from 1077 kids for survival performance between 2009-2012. Milk components (fat, protein, lactose and non-fat dry matter) of goats (n=162) and body weight changes of kid’s (n=64) were evaluated for one year in 2012. Estrus rates and survival rates were similar among all genotypes. Kidding rate was significantly higher in F1 goats than Saanen goats. Saanen goat had the lowest average mean daily milk yield compared with other genotypes. The effect of year and age were significant on milk yield. Goats in F1 and B1 genotypes had higher milk protein percentage and non-fat dry matter content in comparison with Saanen and B2 genotype. Milk fat and lactose contents were similar among genotypes. Birth weight and monthly live weight were similar between genotypes while weaning weight, six month live weight and yearling live weight were higher in B1 kids in comparison with Saanen kids. The effect of dam age and birth type were significant on birth weight, monthly live weight and weaning weight. The findings related to performance characteristics in goat genotypes investigated show that B1 genotype could be recommend for semi-intensive production system in the Western Anatolia.

This study was carried out in 2015-2016 cropping year in Kırklareli ve Edirne locations with 60 oat lines and 4 varieties of commercials (Kırklar, Kahraman, Yeniçeri and Sebat). The experiment was arranged in an alpha lattice experiment design (8 x 8= 64) with three replications. In the research, it was aimed to determine genotypes suitable for the region by examining yield and some quality parameter performances of oat genotypes.The traits such as grain yield (GY), thousand kernel weight (TKW), test weight (TW), plumpness (P, sieved 2.2 mm slotted), husk rate (HR), full grain oat protein (FGOP), starch (S), β-glucan (β-G) and L value (L) content of genotypes were investigated. The variation among oat lines for grain yield was significant and differences for TKW, TW, P, HR, FGOP, S, β-G, and LBV were also determined. The GY, TKW, TW, P, HR, FGOP, S, β-G and LBV of oat lines ranged between 588.3-860.8 (735.0) kg/da, 21.1-44.0 (31.9) g, 49.3-58.9 (54.7) kg/hl, 13.5-93.5 (69.9) %, 12.1-31.1 (23.9) %, 14.9-20.9 (18.1) %, 51.3-60.5 (56.2) %, 3.2-4.7 (4.0) % and 83.6-89.3 (87.1) in Kırklareli and 472.8-90.35 (681.3) kg/da, 23.0-41.3 (32.4) g, 42.9-55.3 (549.2) kg/hl, 22.4-95.8 (74.7) %, 18.3-30.8 (25.0) %, 14.9-20.3 (18.1) %, 53.1-62.8 (57.5) %, 2.9-5.0 (3.9) % and 84.2-89.9 (87.7) in Edirne respectively.The oat lines 14, 16, 19, 43, 3, 48 and Kırklar and Kahraman varieties were hopeful in Kırklareli and the oat lines 16,18,19, 21, 22, 44, 2, 51, 52 and Kahraman variety were hopeful in Edirne location for grain yield and investigated quality parameters. The oat lines 14, 16, 19, 21 and Kahraman variety were suitable in terms of investigated traits in Trakya-Marmara region.
