[The role of water in thermal processing of solid food]

Ein beachtlicher Teil unserer Lebensmittel wird in der Lebensmittelindustrie, in Gross- und Kleinkuechen mit heisser Luft waermebehandelt. Nahrungsmittel sind oft hitzeempfindlich und veraendern ihre physikalischen, chemischen, stukturellen oder mikrobiologischen Eigenschaften waehrend der Hitzebehandlung. Dies beeinflusst sowohl die Qualitaet als auch den Naehrwert der entsprechenden Lebensmittel. Ferner ergibt sich oft ein Verlust an Wasser oder anderen Lebensmittelinhaltsstoffen. So betraegt der Wasserverlust beim Backen von Brot 15 bis 20 % und beim Kochen von Fleisch bis zu 30 %. Es werden die Mechanismen des Stoff-Transports, die Eigenschaften des Lebensmittels, die in diesem Zusammenhang von Bedeutung sind, sowie einige Beispiele fuer Qualitaets- und Naehrwertveraenderungen, die waehrend der Verarbeitung auftreten, diskutiert.

Application of the herbicide at rates up to 2 kg per ha decreased leaf hardness and increased nitrogen content. The results indicate that low levels of herbicide application can favour attack by herbivores such as the biocontrol agents Sameodes albiguttalis and Neochetina spp.

Species composition of algae and aquatic plants in Bung Si Phi swamp were investigated during February to July 1985. The samples were collected randomly 3 times in February, April and July respectively. Thirty-five species of algae and seven species of aquatic plants were observed. Closterium sp., Cosmarium sp., Mougeotia sp., Onychonema sp., Pediastrum sp., Tetraedron sp., Anabaena sp., Oscillatoria sp., and diatom were dominant species of algae population while Ceratophyllum demersum, Hydrilla verticillata and Najas minor were dominant species of aquatic plant and occupied major area of the swamp. The proximate analysis of Spirogyra sp. showed 12.81 percent of protein nitrogen content by dry weight. The protein contents of aquatic plants ranged from 10.79 to 13.99 percent by dry weight.
