Quality evaluation of Portuguese honey

Mendes, E. | Brojo Proenca, E. | Ferreira, I.M.P.L.V.O. | Ferreira, M.A.
The present work was conducted to evaluate the quality of 25 brands of honey commercially available on the Portuguese market, in a total of 50 samples. The brands included unifloral and multifloral honeys, which were studied and botanically typified. Carbohydrate composition was determined by HPLC-RI to evaluate the contents of monosaccharides fructose and glucose; the disaccharides saccharose, maltose and trehalose and of the trisaccharide melizitose. 5-Hydroxymethyl-2-furfuraldehyde (HMF) was quantified by HPLC-UV and other physicochemical quality parameters were also carried out according to the European (Directive 74/409/EC) and Portuguese Regulations (Decreto-lei No. 131/85, 1985) in order to determine moisture, ash content, diastase activity, free acidity, free acidity and water-insoluble solids. All samples were organoleptically and microscopically examined. Only 13 brands were found to meet all major national and international specifications, the remaining 12 did not agree with one or more of the analysed parameters (HMF, diastase activity, or carbohydrate composition); such observations may reflect an inadequate manufacturing or storing process and a certain ageing of these honeys.

Usual evaluation of plough shares is based on monitoring of weight decrease and their geometrical changes. The authors created a special criterion - the unit costs of renewal and operation of plough shares. This approach makes possible not only to estimate quality but the define the optimal plough share renewal. This arrangement improves also quality environment.

Objective: To evaluate the nature and strength of associations between quality of life and factors commonly linked with malnutrition in participants in a meal program for the elderly. Design: A questionnaire that assessed quality of life. nutritional risk, quality of health, depression, social satisfaction, functional status, food security, and food enjoyment was administered. Subjects/setting: All persons aged 60 years and older enrolled in the Title III-C meal program in Pepin County, Wisconsin, during a 1-month period were asked to participate. Of 180 eligible subjects, data were available for 155; 108 received meals at congregate sites and 47 received home-delivered meals. Statistical analyses performed: Descriptive statistics were used to characterize the population. Independent-samples t tests and chi2 analysis were used to test for differences between the congregate-meal group and home-delivered-meal group. Spearman correlation coefficients were used to determine the direction and magnitude of associations between scale variables and quality of life. Results: Quality of life and quality of health were positively correlated (r=.83, P<.0001.) Nutritional risk, food insecurity, decreased enjoyment of food, depression, and impaired functional status were all negatively associated with quality of life. This research offers evidence that there are measurable associations between nutritional factors and quality of life. Applications: Our findings could be helpful to dietitians in justifying, planning, and evaluating nutrition programs and interventions. Quality of life in older adults may be further enhanced by programs that include social and psychological components in addition to elements oriented to reduce nutritional risk.

Biological evaluation of protein quality of barley

Protein quality of barley cultivars, namely BH-331 (hulled), DL-88 (hullless) and Dolma (hullless) having 2.18, 4.60 and 6.23% beta-glucan content, respectively, was biologically evaluated by rat growth and nitrogen balance studies. Feeding of BH-331 barley diet resulted in marked decrease of food intake, body weight gain, food efficiency ratio, protein efficiency ratio, nitrogen absorption, biological value, net protein utilization and utilizable protein. The diet containing Dolma cultivar (hullless and high beta-glucan) caused by intermediate effect on all the protein quality parameters. DL-88 (hullless) gave better results than BH-331 and Dolma. Therefore, beta-glucan content may not be affecting protein quality parameters in barley. However, hulled barley (BH-331) showed adverse effects on biological parameters in which husk seems to contribute towards unpalatability of the diet, thereby leading to a reduced food intake and other related parameters.
