Turkish. Suürünlerinin kalitesinin değerlenmesinde kullanılan geleneksel yöntemlerduyusal, fiziksel, kimyasal ve mikrobiyolojik analizler dizininindenoluşmaktadır. Koku algılama sensörünün kullanımı bu dizindeki bazı analizlerinyerini alabilecek ve birçok analizin de ta­mamlayıcısı olabilecek yenilikçi biryöntemdir. Bu der­lemede literartürde daha çok elektronik burun (E-bu­run)ismiyle anılan, gaz ve aroma sensörleri, koku algı­lama veya yapay koklamasistemleri de denilen sensör­lerin nasıl geliştirildiği ve bu sensörlerden suürünleri­nin kalitesini belirlemede nasıl faydanıldığı konusunda bilgiverilmeye çalışılmıştır.

English. Traditionalmethods used for evaluating the quality of seafood are consist of the directoryof sensory, physi­cal, chemical and microbiological analysis. The use of theolfactory sensors that can replace some of the analy­sis in this directory andis an innovative method that could complement the many analyzes. In this reviewis aimed to give information about development of sen­sors, called moreelectronic nose (E-nose), gas and aroma sensor, olfaction or artificialolfactory systems in the literature, and how to determine the quality offishery products from these sensors.
