[Development of biotechnology of obtaining modified plant phospholipids]

The research work covers the issues of the development of the technology of obtaining a plant phospholipid product peculiar to the improved emulgation force. The product can be used in food industry as emulgator and biologically active food additive. Technologies of obtaining phosphatide concentrate (PhC) and extracted phospholipids (EP) are developed. A technology is elaborated of obtaining a phospholipid product (PhP) from the PhC modified biotechnologically using the enzymatic preparation developed having the A2 phospholypase activity. The qualitative changes in the PhP obtained while stored and the functional and technological properties of the PhP while using them in production of mayonnaise and wheat bread are investigated
