[Forming the quality of finely-dispersed powder-like colourants, BAAs of red beet and the use thereof in food products]

The present thesis is focussed at the merchandising assessment of the quality of new finely-dispergated powder-like colourants (BAA) obtained of red beet (RB) with the aim of theoretical and experimental disclosure of the regularities of the effect of such factors as SHF-treatment, highly-dispersive comminution, vacuum drying on forming the consumers’ properties of the RB BAAs, assessment of their quality while they are stored, as well as their use while making the food products. The innovation of the study lies in the fact that the expediency of the complex use of microwave SHF-treatment of the RB prior to the drying, vacuum drying and highly-dispersive comminution is scientifically substantiated and proved as means to improve the quality of the BAAs while obtaining them. Results of the study are as follows: developed are technologies for obtaing the RB BAAs and formulations of new products based on them. The results are used at SPC “Phypar” and “Ramon”, CJSC “Phytoria”

Ukrainian. Об'ектом дослыдження э товарознавча оцінка якості нових дрібнодісперсних порошкоподібних барвників - БАД із столового буряка (СБ). Мета дослідження - теоретичне й експериментальне виявлення закономірностей впливу НВЧ-обробки, високодісперсного подрібнення, вакуумного сушіння на формування споживчих властивостей БАД із СБ, оцінка їх якості в процесі зберігання, а також використання при виготовленні продуктів харчування. Новизна дослідження полягає в тому, що науково обгрунтована та доведена доцільність доцільність комплексного використання мікрохвильової НВЧ-обробки СБ перед сушінням, вакуумного сушіння і високодісперсного подрібнення як засобів підвищення якості при одержанні БАД. Результатом проведенного дослідження стали технології БАД із СБ та рецептури нових виробів з їх використанням. Розробку впроваджено у виробництво у НВФ "Фіпар" та "Рамон", ЗАТ "Фіторія"
