Effect of high air temperature in bin drying on milling yield and quality of rice

This study was conducted to evaluate the effects of airflow rate and drying air temperature during partial drying on the drying time and grain qualities, namely: percent germination, percent cracked grains, milling recovery, head rice recovery, whiteness, and hardness. Twenty-one treatments, with three levels of airflow rate and seven levels of drying air temperature, were performed on IR-64 rice variety. Significant differences were observed on the drying time, percentage germination, milling recovery and head rice recovery as affected by airflow rate, drying air temperature and their interaction. High percentage germination was obtained at 110 deg F (33.0% r.h.) drying air temperature regardless of airflow rate. Lower airflow rate and drying air temperature resulted in longer drying time, higher milling recovery and head rice recovery. Moreover, high drying air temperature was found to increase cracking of grains, and to lower the whiteness of milled rice while the interaction of the airflow rate and drying air temperature significantly influenced the hardness of the grain in a non-specific trend.
