Adaptation of potato processing technologies under Baguio condition [Philippines]

The study aims to determine the socio-economic viability, acceptability and operational requirements of a potato integrated processing system. Results of the study showed that potato chips have a considerable acceptance in the market. In terms of taste, it can compete with other commercially available potato chips. However, to be competitive in the market, the product must be unique in terms of quality and the packaging material must be attractive. For fries processing, a pre-pilot testing stage is still an on-going activity for this project. A total of 3,130 kg of raw potato was processed into fries and was distributed to eight market outlets to determine the product's acceptability. Market outlets for potato fries and chips include Baguio Holiday, BSU Marketing Center, Uneed, Tiongsan Supermart, Pines Supermart, Taff Superette, C & A Triple Supermart, Caroline Trading and stalls in Strawberry Farm. The unreliable supply of raw material hinders the expansion of market outlets. The successful operation of a potato processing plant depends on the availability of raw material (i.e. processing varieties) and the right market for the products
