Au cours de ce travail on a étudié, sur un vin mousseux élaboré en cuve close, l'influence d'un traitement thermique (chauffage à 42 °C) après la prise de mousse et en présence de levures.Par chromatographie sur gel de dextrane réticulé on a isolé trois groupes de substances azotées. Le traitement thermique entraîne une augmentation des fractions azotées de poids moléculaire inférieur à 1 000 et une diminution des composés azotés de poids moléculaire plus élevé (peptides et protéines). Ce phénomène est en relation avec la durée du traitement thermique.+++A thermal treatment (heating to 42 °C) on a sparkling wine processed in a pressure tank, after second fermentation and in the presence of yeast was studied.By chromatographie on a reticulated dextrane gel, three groups of nitrogenized substances were isolated. The thermal treatment trought about an increase in the nitrogen fraction of molecular weight less than 1 000 and a decrease in nitrogen compounds of greater molecular weight (peptides and proteins).
