تأثير عوامل مختلفة في التركيب الكيميائي العام والأحماض الأمينية للحم الإبل السورية المسمنة.

هدف البحث إلى دراسة تـأثير الجنس والعمر والموقع التشريحي على التركيب الكيميائي العام للحوم الإبل السورية وحيدة السنام ذات التغذية المسمنة ومحتوياتها من الأحماض الأمينية. خضعت للتحليل عينات من العضلة الظهرية المستطيلة (المتلة : Longissimus dorsi) وعضلة الشهباية(Semimembranous) من ذكور وإناث الإبل ومن ثلاث فئات عمرية: الفئة الأولى1.5-2 سنة والفئة الثانية 3-4 سنة والفئة الثالثة 5-6 سنوات، بواقع ثلاث عينات من كل فئة عمرية ومن كل جنس. تميز لحم الذكور بنسب رطوبة وبروتين أعلى وبنسب دهن ورماد أقل مما في لحم الإناث، وانخفضت نسبة الرطوبة والبروتين وارتفعت نسبة الدهن والرماد بتقدم عمر الحيوان، وكانت نسب الرطوبة والبروتين والرماد أعلى في عضلة الشهباية، بينما كانت نسبة الدهن أقل. وجد أن كميات الأحماض الأمينية أعلى في لحم الذكور مما هي عليه في لحم الإناث باستثناء كمية حمض المثيونين كانت على العكس، وانخفضت كميات الفالين والإيزوليوسين والمثيونين والألانين والغلوتامين والتيروسين وزادت كميات الليوسين والثريونين والتربتوفان والفينايل ألانين والأسبارتيك بزيادة عمر الحيوان. وكانت كميات الفالين والليوسين والمثيونين والألانين والأرجنين والهستدين والغلوتامين والبرولين أعلى في حين كانت كميات الإيزوليوسين والثريونين والتربتوفان والفينايل ألانين والأسبارتيك والغلوتامين والتيروسين أقل في الشهباية منها في المتلة.   The aim of this research is to study the effect of sex, age and anatomical location on the chemical composition and amino acids of Syrian fattened camel meat. Samples from dorsal rectangular muscle (Longissimus dorsi), and Semimembranous muscle in three age groups (1.5 - 2 years, 3 - 4 years and 5 - 6 years) were analyzed in triplicates from every age group and from each sex. Percentage of moisture and protein in the flesh of males was higher than the flesh of females. Moisture and protein decreased, while fat and ash increased according of animal's age. Moisture, protein and ash were higher in Semimembranous muscle, while fat was low. The amounts of amino acids were higher  in the flesh of males than the flesh of females, but the amount of  methionine was opposite. The amounts of valine, iso-leucine, methionine, alanine, glutamine, and tyrosine decreased, while The amount of leucine, threonine, tryptophan, phenylalanine and aspartic increased by animal age. The amounts of valine, leucine, methionine, alanine, arginine, histidine, glutamine and proline increased while the quantities of iso-leucine, threonine, tryptophan, phenyl-alanine, aspartic, tyrosine and glutamine decreased in semimembranous muscle compared with dorsal rectangular muscle.
