Das Essen im Krankenhaus dient nicht allein dem Sattwerden - es soll mit zur moeglichst raschen Genesung des Patienten beitragen und wird deshalb von medizinisch-therapeutischer Seite mit beeinflusst. Besonders schwer haben es hier die kleinen Haeuser unter 250 Betten, fuer die aufwendige Verpflegungssysteme wie im Grosskrankenhaus meist nicht durchzusetzen sind.
